Raspberry Fluff
Ingredients:
- 1 package (3 oz) raspberry Jell-O (sugar-free if preferred)
- 16 oz cottage cheese
- 1 tub (8 oz) Cool Whip, thawed
- 1 can (20 oz) crushed pineapple, drained
- 1 can (11 oz) mandarin oranges, drained
- Fresh raspberries for topping
Instructions:
1. **Mix Cottage Cheese and Jell-O**: In a large bowl, combine the cottage cheese and raspberry Jell-O powder. Mix well until the Jell-O is fully incorporated into the cottage cheese.
2. **Fold in Cool Whip**: Gently fold in the Cool Whip until the mixture is smooth and well combined.
3. **Add Fruit**: Add the drained crushed pineapple and mandarin oranges to the mixture. Fold gently to evenly distribute the fruit.
4. **Chill**: Cover the bowl and refrigerate for at least 1 hour to allow the flavors to meld and the mixture to firm up slightly.
5. **Serve and Top**: Before serving, give the mixture a gentle stir. Spoon the Raspberry Fluff into serving dishes and top with fresh raspberries.
