It would be a nice addition to see the camera crew also taste the food at the end! I know they get to eat after filming, but it’d be a fun thing to watch occasionally! :-)

I literally made this LAST NIGHT and I think it's v important to say that contrary to the idea that this is an 'occupied the whole time' dish, it's actually perfect to make in advance! You can make the sauces, blanch the veg & prep the chicken hours ahead and just pop the chicken in 90 mins before you plan to eat. Take it out of the oven, let it rest while you take your veg out of the fridge and arrange on a plate to take the chill off, carve that bad by up and you're good to go! A perfect (and delicious!) dinner party meal :)

Top notch, as always! Reading Nothing Fancy and thinking about all the fun to be had “having people over” really helped get me through lockdown! Qq: is it sanitary to reuse a bowl of salt that raw, meaty fingers have been in? I notice in countless cooking videos that the chef will handle raw meat, then plunge their fingers into a bowl of salt, and repeat. Is this just to avoid editing out constant hand-washing or wrestling with kitchen thongs? Or is there some science behind being able to reuse salt that raw, meaty fingers have touched?

Salt dehydrates cells. Many types of bacteria won't survive in a high salt environment (or will at least grow/reproduce more slowly). Unless your hands are really dripping, it also seems more likely to have extra salt stuck to your hands than excessive meat juice contaminating your salt. Chefs also tend to use a lot of salt so that bowl is being emptied fairly quickly. I think many chefs also try to keep one hand clean (i.e. free of raw meat juice) for seasoning purposes. But it is probably a combination of many factors... science, technique, editing.

Alison's channel is one of the many new channels that filled the hole in my heart that Bon Appetit left after it fell apart. Just people cooking great recipes in their home & talking passionately about food all while just being themselves. I'd watch videos like this over any cable cooking show. Moving out of my parents' house soon and can't wait to make some of these recipes.
