I have seen exactly one video showing how to do an afterthought heel. It doesn't look like a super beginner friendly type of heel to me. I've made several pairs of socks, mostly cuff down, but I just learned how to do a toe up sock, with Germen Short Rows for the heel. That wasn't as scary as I thought it would be, so perhaps the Afterthought Heel won't be as scary either. I may have to try that for the next pair I make, as I'm already doing a pair with the Germen Short Rows again. I'm trying to get out of my comfort zone with what I already know how to do, be a little more adventurous with the things I want to make, you know? Just to keep things interesting, and try to learn new things. It's so cool that there's so many different ways to make the same thing!

You are so right. There are many ways to get a result and I think you have to try a few different techniques to find the one that you are most comfortable with. I like things to be easy and intuitive so that I can just knit up without referring to charts and patterns. Having said that sometimes its fun to knit a pattern and be guided! :)
