Jill I made this focaccia this morning. I have made focaccia before. But this is by far the best one I’ve made. I just had myself a pepperoni and Swiss Sammy on it. Thank you I’d send a picture but can’t seem to do it on here. Delicioso!

Good evening Jill. That looks absolutely delicious - fresh from the oven homemade sourdough bread. Thanks for sharing. What I like most about sourdough bread is that it contains higher levels of vitamins, minerals, and antioxidants than other breads, as well as lower levels of phytate than what you find in regular bread. It really is easy once you stop over thinking it. Flour is it's friend when feeding. One tip I got when feeding was, you know it's enough flour when you can hold the starter upside down and nothing pours out. I've also found an oven light is just enough to keep it happy while proofing. This is probably one of my most favorite things to do...bake sourdough!

I want to start so badly but I'm so nervous to dive in! I've baked other easy breads, and so badly want to nail sour dough. It's a 2023 goal of mine. Until then, I keep re-watching, listening to you and following for ideas until I just take the step of faith into bread baking. This is a gorgeous video, perfect lighting and setting by the way!

I'm still trying to get the hang of making no knead artisan bread! My first attempt , at what was also deemed "a beginner recipe," was an epic fail! I am not yet getting discouraged, and I will try it again. But I think I should get that down first before I even think about trying take sourdough bread! I do want to eventually try it,though.

So you feed your sourdough starter and then how long after you feed your starter do you start to make the focaccia? Does it have to rise a little before you can use your starter to bake?

I have struggled with sourdough bread, and finally found a combo loaf from a neighbor for sourdough starter mixed into a white bread recipe to make sandwich bread with a nice sour taste. It is one bulk rise, form, rise and bake! It does have yeast added so that helps it take off. Great use of extra starter too x hubby lives it for sandwiches! I am planning on doing a video next time I bake it!

Help. I followed your instructions for sourdough starter and now i am at day 8. I have gotten to the first step of making the bread. It is sitting in a bowl waiting to rise. What do i do with the starter? Do i leave it in jar on counter, do i continue discard and feed? I plan to use naybe weekly. How do i know it is ready? There are bubbles, it has risen, in jar, but then i did a water float test and it sank. Will it keep going left out for a dew days without feeding? Thanks so much

Otis has been on my desk since then. RMSF is behind us now, and I am ready to open Otis and start using him. Can you direct me to where your instructions are, for rehydrating Otis, please? I do wish you could sell your pottery with your merchandise. Your bowels and cups that you use. I love pottery and our taste is the same. If you design your own, then I'm sure you could work with someone to make them you are so creative you could do the whole process your self!
