INGREDIENTS - for 6 tartlets
_Chocolate Sweet Dough_
- 66g powdered sugar
- 148g all-purpose flour
- 20g almond powder
- 1.2g salt
- 24g cocoa powder
- 100g softened butter
- 38g eggs
- 1 tsp cocoa butter
- 2 tsp softened butter
_Whipped Ganache_
- 148g heavy cream (30% fat)
- 1.3g powdered gelatin
- 8g water
- 35g dark chocolate
_Dark Chocolate Ganache_
- 203g heavy cream (30% fat)
- 146g dark chocolate
_Decoration_
