As a Scandinavian whose been making sandwich cakes since I was 15 years old my pro tips are to cut off the crusts, alternate with both white and brown bread and before spreading on the filling brush some cooled down veggie stock over the slices to help press the slices tighter together. Also put a clean chopping board on top of the cake, after you've wrapped it with cling film, as a weight before putting it into fridge; this helps keeping the structure nice and firm.

@EiKk4__4 жыл бұрын
The cake might become dry without moistening the bread with beef, chicken or fish stock (depending of the cake you are making.) I highly suggest layering the cake into a mold and moistening every layer. After that a 2hr rest is needed. After thath take the cake out of the mold and smother it with cream cheese of your choosing + decorations with lemon, pickle and fress dill :)
@inthekitchenwithelisa4 жыл бұрын
Hi there, thank you for sharing your tips😊 I make mine always a day in advance and that is why I don't moisten it as it does absorb a lot of moisture from the filling over night 😊 I like the idea of using a mold, definitely makes the cake more straight and easier to decorate, unfortunately I have none that would work😫 Also like your decoration suggestions👍🏼

@inthekitchenwithelisa6 жыл бұрын
I didnt, that is true. But I didnt because my filling is very moist as you can see on the video and I never serve it on the same day so it has time to get the moisture through the layers (that is also what I suggest in my recipe). Never had a dry sandwich cake with this recipe :) P.S. But I know that most recipes do that, but when I did it with my recipe, the result was a soggy sandwich cake and that is also not something I would want to serve.

Hey there, thank you for your honest opinion :) Yes, I know it can be made in many different varieties and this is just one of those. My goal with this recipe was to simplify it so that anyone can make it with minimal effort, but still enjoy it :) My whole family and friends enjoy it whenever I make it and they as for it for any holiday or birthday, so I guess for us it is more than just ok ;)

But thank u for ur message and happy making it and other varieties in the future!!

@@Mixedswedishandgambian1979 Don´t worry, I didn´t think you were rude :) I also didn´t want to come across as rude. I just wanted to explain the reason why this recipe is like it is. I love trying new ways of making recipes and I willl definitely be trying other for the sandwich cake as well :) I just find that the more complex the recipe, the more challenging people find it and end up not trying it out.. As a Swede from the country of sandwich cake I just think this one looks very poor and boring. The decoration on top should be rich not just some minimalistic decoration like this. It should be packed with egg, smoked ham, cheese, shrimps tomatoes. cucomber, smoked salmon and more.
@inthekitchenwithelisa5 жыл бұрын
Hi, I do understand what you mean, I come from Finland and we like the sandwich cake no less than the swedes😉 However, this tutorial is meant for those unfamiliar with this cake and I purposely wanted to keep it simple. The decoration is just a suggestion, anyone can make it the way they want. Also to be honest, I prefer a simpler decoration on these myself as if you are not serving it right away, all those things you mention dry out and are not very appetizing on the second day. But as said, anyone can decorate it the way they want, this is just a suggestion for those new to this cake.

Why disappointing? It is actually really yummy 😋 Yes, obviously it is easier to make individual sandwiches, but that isn't the point here. This is something very typical made for different celebrations in scandinavian countries.

@@inthekitchenwithelisa disappointing only because when hearing cake I expect sweet, and it is not only not sweet, but savory a fish sandwich even it seems. I even like sandwiches sometimes. I can understand that 😅 Have you ever had a quiche? It is also a pie, but savoury one. So this is kind of a similar concept.
