Nice overalls lol. Not sure if the fans not kicking in would cause it to go into limp mode. I would have thought your temperature gauge would start to give a high reading after the engine started to get warm. With the radiator not getting its blow of air from the fans. Hope you find out the fault soon buddy.

If it's like the later ducato your fuel filter is behind the air filter housing, if you had trouble after filling up it's a good chance the filter is blocked, engine need fuel air and heat your missing enough fuel, or if it has one is the turbo waste gate stuck open

Engine light could be anything, worth checking all the basics yourself, all your fluid levels, is the engine running ok, when was last time it was serviced. Think yours is modern enough to have a data connection where a garage could plug in that may help a bit.

Engine has to be very hot to get the fans to kick in, as diesels don't get as hot as petrol engines it'll need to idle for ages to get hot enough. Sounds like a fuel supply issue, how old is the filter?

Starting to think fuel now, so swapping filter again and working from there, pipe by connections. Hopefully not something too expensive
