I put my Thanksgiving bird in a brine for 24 hours before smoking it this year. It is a WORLD of difference. It was juicy and SO flavorful. I will always brine from now on.

Brining is the way to go! I've used Rachael Ray's turkey brine recipe for years. I bought a brine bucket with lid from Amazon and I don't have to worry about spilling the brine.

Thank you for mentioning how to include kids in the process. My little one loves to help but it can be too much to have her around the kitchen. Having the kids help with the cup measurements and hanging them count is a really good idea.

I've been brining for years. Game changer! I haven't tried orange peel though. For cook time I put a bundle of celery sticks and leaves into the cavity. It adds flavour to the broth for gravy. I make dressing separate and pour some broth in.

Just got your Preppy Kitchen Super Easy book in the mail last week and I’m loving it!! The recipes look great and they really are made in a way to where it’s fairly easy to create those special moments with the family :) you’ve really inspired me to start baking and cooking a lot more and I’m looking forward to making the build your own focaccia this week!

Tip to get the skin off garlic, separate the cloves and put in a bowl and cover with another bowl and shake vigorously.

I always brine turkey’s and use the Wolfgang Puck recipe, which is delicious, but this is simpler, so I’m going to try John’s recipe this Thanksgiving instead. Brining is the way to go for sure.

I like getting cornish hens for special holiday meals. Nobody to share with means no reason to get a ginormous bird. I'll definitely be trying this brine recipe on my little birds! Thanks for the wonderful recipe/technique 😁 Also, a comment on the garlic: I do agree that fresh is always better than the weird stuff in the jar. But for everyday use, especially if you don't have the energy to do ALL the steps, I like garlic paste from the refrigerated section. Tastes a lot more like fresh garlic than other prepared versions imo, and all you do is squeeze it out and go to the next step.

One tip for if your fridge is packed and there's no room for the turkey is to brine it in a cooler. Get a styrofoam one so you don't have to worry about washing it. Just fill it with ice after the brine and turkey go in, and set it somewhere out of the way while you get everything else done. It's what we've done for years and it works like a charm!

I go with a dry brine now as wet can be a bit of a messy situation Lots o’ Salt mixed with Orange or lemon zest Thyme Rosemary Pepper Pat over the bird til it looks like a light snow, plus inside cavity 2 days in the fridge Light wipe off

Can’t wait to try- what large stock pot would you recommend? I think I need a 20qt for by 14lb turkey but I’m having trouble find a good 20qt stock pot.

I use apple cider with spices and cut apples and cinnamon stix I have used orange in the past.... this year Im cutting up the turkey (maybe) and then brining....what do you think about that idea ...would you do that? will it affect the juciness? .....You always put out great videos but I cant eat most of what you put out(keto) but I have tweaked a couple....Julianna NC

You cut the toikey!? The juiciest turkey I've had was deep fried. My friend's pa gets that right every year. So yum. So most fridges can't fit a giant pot with all the rest that is going on for t day. My advice... get a brine bag and a large ice chest. Put prepared turkey n brine bag inside the chest and fill with plenty of ice for overnight. It's out of the way and stays a safe temp. Last thought...Two smaller birds are better than one giant monster turkey. They roast up better imo

Hi John; You didn't wash the bird. This must, be done inside, using your hand to scrap out the "mess" from back of the bird and the front. You didn't tell the people to take out the neck and giblets; which come in a bag in the bird. And if you're making stuffing do not cook, the stuffing inside the bird; cook the stuffing, on top of the stove; then put the stuffing, in the bird, after its done.
