yay Chris' mom! Like the oil free sauteing. I sometimes think the youngins don't care about it because...well...they are young and aren't yet worried about cloggers arteries. Thanks for us older people struggling to get rid of the grease on the lips and the hips. I know....bad.

great recipe... thanks for the share. PS my Italian mom and grandma used the term "gravy" when they used meat ( usually pork and beef bones) with the tomatoes cooked all day long. Sauce was meatless marinara (tomatoes and spices only). But, whatever; times change

Shouldn't you wash off the salt after using it to draw out the water in the eggplant? If you don't, you've got two tablespoons of salt in the dish, in addition to the salt in the ricotta and the sauce.

"Gravy" has meat cooked in it. Meatballs, pork chops, short ribs...that is simply sauce 😉
