All these years I’ve been trying to melt chocolate chips! Maybe that’s why I found it so difficult. I never knew that chocolate chips were designed not to melt. Thanks!

Thank you for this. I always thought that you had to have a tempered glass bowl and sit it over the sauce pan to act as a double boiler. This method is very easy and convenient! Thank you.

If you want to melt chocolate in the microwave, you have to do it in intervals of 30seconds and not more than that . Every time you put in microwave, it has to be no more than 30 minutes and check out consistencies until you get to the consistencies you want. Hope that helps.

5:01 Thanks for sharing this. I was able to successfully melt chocolate without it seizing. At first I was worried that it wasn't melting as fast as it should and had considered melting it with the skillet of water back on the stove. But then the chocolate began to melt steadily and I was able to have that luscious shiny melted chocolate.

Thank you so much for this video! I tried melting chocolate chips in the microwave in 30 second intervals however, it came out lumpy and chunky. I decided to look it up on KZbin and came across your video. I bought some baking chocolate and melted it as in your tutorial on the stove and it came out perfect.

If I put it in the middle of a vanilla cake, like vanilla layer then chocolate layer then vanilla layer and back it, would it be still running what I cut a piece? This is not a double boiler. Your pot has direct contact with your pan, even though you have water around it, this is still just cooking a pot on the stove normally with some extra metal between. A double boiler needs the pot to nestle above the boiling water and the apparatus holding the boiling water needs to be able to direct it upwards with high walls, preferably a snug contact so the steam goes directly onto the nestled pot above. The heat distribution and consistency is different. Your video was neat. Thank you for taking the time to post.

It was really a nightmare... Like i started melting the cadbury, my water was boiling... Once, like after 30sec or so, it became nicely melted... i went to bring the butter from the fridge to mix with it. And when i went, i had turned off my flame... when i returned, it was hardened... Now this time, it became so hard that it was not even getting melted in direct contact with the boiling water(i directly dipped my saucepan into the water)... I think i created that 'lumpy mass' which u were talking about... But hey, whats the science behind it? Why the melting point became so high this time? And why even this chocolate became hardened?

I used to do the mistake of using milk from fridge in melted chocolate to make it thin. But the choc would immediately seize. Chocolate is temperature sensitive. Guess milk should be warm n then added.. Or added at the beginning with chocolate

Thank you for this informative video! I have a question and I was thinking you could perhaps answer it for me. I have a recipe to make eclairs from a cookbook called The Cardamom Trail. It's a great book, but the part about the melted chocolate went wrong both times because I did it directly on the saucepan/heat (it turned into a block). Now I will do it from the method from this video since that's the proper way. The book's recipe is for a caramel chocolate sauce. It says to melt dark brown sugar with butter first (having it come to a boil and then stirring for 1 minute) and then add in dark chocolate and some heavy cream. Would it come out ok with those ingredients if I did it in this method? Could you also tell me what effects sugar, butter, and heavy cream have on melted chocolate. Sorry for the long message. I hope I made sense :-) Thanks again!

Thank you for watching my video Lisa! You generally need to be very careful when you are melting chocolate on its own / chocolate and butter together, whatever method you use. But when there is liquid to be used along with it - like milk, cream or water, it is much easier. I don't think you need to use the method in the video for this sauce. You could try heating together the butter(soft), brown sugar and cream till it begins to steam. Take off the heat and stir in the chopped chocolate till it melts. That should work.Generally, any temperature variation causes the chocolate to seize up. So do not add cold cream to melted chocolate. Chocolate butter can be melted together(video method), then you can safely stir in the sugar. Hope this helps! That book sounds tempting, enjoy the book and the eclairs - with the sauce :). Thank you for your suggestions! I took your advice- heating the butter, sugar, and cream. Then, I took it off the heat and put the chopped chocolate. It worked perfectly, thanks! I enjoyed learning more about how chocolate works, what it likes and doesn't like, haha. Now I was really able to enjoy the eclairs :-)

People have been using Nestle's chocolate chips for melting in tons of recipes for many many years. Same method to melt, slow with pan of water like that. Add eagle brand milk with nuts and jogi berries for easy great fast fudge. Pour into glass or any small square container and put in fridge until firm.

Do you mean chocolate collar for decorating cakes? You will need to melt chocolate and pipe it on baking parchment. Wrap it around the chilled frosted cake when the chocolate sets slightly and press it. Refrigerate for half an hour and carefully peel the parchment.

HELP!!! I have a 2 cup tempered glass measuring cup full of chunks of white chocolate, and milk chocolate, and dark chocolate candy bars and some nestle chocolate chips as well. I am thinking of putting it all in the oven together to melt it evenly before stirring it all together very well and pouring it into a pan to make thin bars of whatever it makes. Questions: #1. Is this a bad idea? #2. Is it safe to put the tempered glass measuring cup in the oven? #3. How hot should I make the oven and for how long should I heat the chocolate? #4. What kind of non-stick spray should I spray on the pan I am pouring the chocolate into. It is a “non-stick” “copper coated” pan, but I know from experience they are not really non-stick. That is a lie they tell to sell them.

I will. I bought a big bag of Belgian chocolate which is designed for cooking. On its own, it is quite bitter, so needs some butter and sugar added. I have experimented, creating an ugly mass lump which was actually quite tasty. Research, research, research. I intend to master this skill and hope to create some chocolate covered fruits or similar.

Shilpa white chocolate is much more sensitive, so you need to be more careful. Please follow the tips given here for melting white chocolate and let me know how it worked for you
