Yum this looks amazing and I cannot wait to try it. I have a question though, what is the reason for the starch? I have been vegan a long time and eat a lot of tofu in various ways and the only time I have ever seen in recipes to use starch on them is either to make the tofu crispy (my favourite way) or to thicken the gravy/sauce the way one does with meat such as beef when making a stew. I thought at first you were doing the starch for crispiness when you fried the tofu, but then you added the flavouring sauce to it and carried on cooking which takes the crispiness away that you had built up. So, could this be made without the starch and avoid a step? Wouldn’t it allow the tofu steaks to soak up more for the flavouring without the starch? I mean no disrespect to you and am just trying to understand the recipe. I am going to cook it as you suggest, but as I have been a tofu loving vegan and want to learn as much as I can when it comes to cooking (and even making) tofu. I may be missing a whole way for cooking it. Thank you for the recipe, I can’t wait to try it, and thank you for insight you can provide me with my question, both are very much appreciated. 💚🙏

Hubby loved it so much that he is requesting it to be made regularly. 👍 Success. lol. He came into the kitchen because it smelled so good while I was cooking and declared it smelled better than an Asian restaurant lol. I love these kinds of recipes, they are delicious with just basic ingredients. My other favourite is puffed tofu with enoki sauce. I could eat it daily it is so tasty, just as your tofu recipe here. Thank you again, I appreciate all your help! 💖🙏

I recommend allulose. It is expensive but behaves and tastes most like cane sugar. No detectable aftertaste. It requires about a 1/3rd again as much to equal cane sweetness. I would personally avoid erythritol.
