I canned up beef broth, chicken broth, blueberry pancake syrup, and elderberry syrup for our home this week. Then, I helped my daughter at her home can up potatoes, stewed tomatoes, blueberry pancake syrup, and fish. We are both glad to have cleared up freezer space! Happy Canuary 😊

I've made blueberry syrup. Basically, boil the berries in sugar water. Then strain for a few hours. Take the juice and boil until it thickens. It's easy. I'm not sure how long it water bathed. I'm sure there's a recipe online. I took the blueberry pulp and cooked it with lemon juice and zest until it reached about 218°. Probably added some sugar to it.

To preserve fresh apples almost indefinitely, Cut up a thick brown paper grocery bag into 6-7 inch squares and wrap each apple separately. Newspaper works too, but I read them online so I use grocery bags. The individually wrapped apples are placed in another grocery bag or container and stored in a cool dry place. I use the bottom of my refrigerator. The paper keeps the apples from touching each other, which is why they don't spoil. I've stored apples like this for several months and they don't get mushy at all.

I am doing the challenge for the first time. As I live in a city and don't have a garden I am allowing myself a small budget to buy fruit,veg, dairy and coffee! LOL. That said my daughter is a freshman in college, so I am alone(I am a widow) and I don't eat as much as one person so I am not seeing as much depletion in my pantry stores. So I am going to extend until my daughter is home for the summer with a pause for spring break as she has requested a few different meals and items I will need to get. I just got a late xmas present of an electric pressure canner so I will can some of the beans in my pantry and stock from bones I have saved.

You feed your children what's good for them. And has nutrition. Better to ask them then waste time, money, and food on non compliant eaters. Except Miss Hannah, who I believe loves everything she gets. I just enjoy watching them all enjoy everything you make.😊🙏

I really like your idea of keeping all jars filled. No empties go to the basement pantry! I’m going to adopt the same. I have about 9 dozen of empty jars. So I’ve started. I filled 14 jar’s with chicken thighs, 12 jars of chicken broth and 16 pints of mushrooms. I’ve got 4 trays of avocados in the freeze drier. Happy cannuary everyone! 😊

I have gone through 3 cases of jars recently, but unfortunately most of them are 1/2 pints, because of us being empty nesters. We also have freeze dried foods, so we are emptying mylar bags as well. Watching your video has me getting the pressure canner back out and putting up something. My one splurge in January was to get 100 lbs of frozen vegetables and freeze dry them. It was the only thing missing from my pantry, peas, broccoli, green beans and mixed vegetables.

Jessica, your homemade apple butter took me back to my youth when my mother made it while I was growing up. One of my favorite ways to eat it was on peanut butter sandwiches, instead of jelly we occasionally would use apple butter. Have your little ones ever tried it on a sun-butter sandwich. I bet it would be delicious 😋.

Ooh I have missed your videos Jessica. I've been having some time away from social media so this was a lovely video to come back to. I really should try making apple butter or apple sauce as I love the idea of making a cake with it. Also I have onions and gherkins in my freezer ready sliced for pickling plus Saville oranges to make marmalade, really need to get those things on the shelves in my pantry.

I recently did a batch of freeze dried garlic, got some of the peel off but most of it went into the freeze dryer - once it’s well blended up those skins disappear - time extension!

Working through my freezer and organizing it. Found some beef stew meat I forgot about and some chicken breasts. I spent today canning meals in a jar from the Ball book. Next up is another batch of Cranberry juice and cowboy candy. Thank you, Jessica, for teaching the difference about the Lard. I learned something new again!

Good morning Jessica. Wonderful video again with lots of great ideas. But right at the end when you were putting away the jars in the basement, I noticed that you pushed a jar under a case full of other jars. I think you should put bands loosely on those bottom jars so the weight of the top case doesn't pop the lids. I just lost 3 quarts of apple pie filling because someone in the family moved things around to make space for more of what I was sending downstairs! If there had been rings on them they would've survived but I didn't forsee that happening. It broke my heart but it was a lesson for everyone. I'd hate fot that to happen to you. I know how much work goes into it! Have a great week.

Hi Jessica, I received a pressure canner for Christmas (a year ago!) and I wanted to finally try to use it. I’m intimidated by the thought. I rewatched your video on canning dried beans (Little Benjamin has really grown!) and I noticed you added an acidic element to the soaking water, but when you washed the beans in getting ready for canning, you did not add that element. So I just wanted to make sure that all you added was water…no acid, no salt, just water, right??? Thanks for your reply. I look forward to watching your new videos every week. Keep up the good work!

Correct. The acid is just for the soaking stage.

Yes. I tried it one year and it worked, but it stuck to the trays a bit and I feel like it wasted a lot of the juice.

Last year I was totally unprepared for the challenge. Made it less than 2 weeks. This year, I am still going strong and making it into the 2nd month and maybe could do 3 months. I am taking note of what I need to stock more of or would have like to have done differently (more soups) This really gets my mind set on how to do hurricane preps better also.

I Love this video and the ideas ❤ I intentionally dehydrated Alot of onions and bell peppers during the summer and it's so easy to just add to meals and go. Also I did alot of soup bases and canned beans(It was my first time pressure canning) which has helped tremendously since the surgery and these freezing days we've had in Oklahoma. Also in 2024 I've started putting my meal planner and things to do (bake bread, pressure can, etc) into my daily planner🙌🏽 I don't know why I thought I could manage 2 planners 🤦🏾As Always Much Love From Okc ❤ Wishing Everyone a Blessed Week 🙏🏾

I too can year around. I cannot grow enough to feed us for long and we are living on disability, so I visit food pantries and mobile food trucks. We usually get produce in quantities the 2 of us cannot eat before they go bad. I can it all. I might get 10 lbs of carrots but not see carrots again for months but I have jars of carrots. This week was 7 lbs of blueberries....so into jars the go.

I’ve been freezing lemon juice in ice cube trays from target. The bottoms of the trays are silicone and it’s easy to pop the cubes out and the trays have lids also!

I am also making room in my freezer for two hogs that are being processed. I had a large bag of chicken backs and breast bones from when we processed our last batch of birds and canned up broth with them. The pieces of meat that were on the backs were stripped off and frozen for a later meal. Hope everyone has a great week!

I watched a video recently that a guy said tallow is great for skin. He said to get grass feed organic. I tried it the only problem is you walk around smelling like beef. Ha ha

Before this challenge I thought of canning preservation primarily for late summer. I’m so inspired now besides the chicken broth I’ve made; I plan to preserve beans, grape jelly, onions and beef broth! This is good stewardship of all those goodies buried in the pantry and freezer! I currently canning plum butter. When I was organizing my freezers for the pantry challenge, I didn’t realize I had 7 gallon size ziplock bags of plums! So it’s plum butter, Asian BBQ sauce, and plum sauce for pancakes.

Jessica, I had the same kind of “oops I’ve” and forgot to bring in several jars of my homemade ferments. I brought everything inside and realized that the freezing wasn’t totally destructive. I threw away several quarts of whole dill pickles…mushy pickles sounds less than appealing. But, my kraut, fermented garlic, fermented kohlrabi, and fermented radish seed pods were just fine. Now my inside fridge is stuffed with all my salvaged ferments. So all is not lost if you act fast! I really appreciate your ways of preserving onions. Mine are now getting a bit over-the-hill. Time to preserve them.

Can I make some recommendations for your garden this year all of which should thrive in your garden & provided you with a wider variety of different vegetables - Cauliflower, beetroot, Kohlrabi, Leeks. Wild garlic, turnips, parsnips, turmeric, good option would be to add mushroom spores to your woodland area & encourage wild mushrooms to grow. These are really easy to grow & very nutritious By the way = always use gloves when cooking / preparing Beetroot & turmeric they stain everything

Great job! A lot of good work done this week. Glad to hear you are planning an indoor access to the cellar - those stairs remind me of my "Grandma's cellar" and are not fun with an arm load. This is so very inspiring! I have a video request and im not sure exactly how to get it to you. When you have the opportunity, I would absolutely love to see a flip through your recipe cards and hear your comments on ways to edit and get creative with each one. During these challenges I am totally stumped by week 2. I am exhausted and after hours of video, feeling a bit scattered. I bought Hope's kitchen (for the simple recipes!) And its been a start. Having some of your thoughts in one condensed refrence would be such a wonderful resource for those of us not as experienced in kitchen creativity! ❤ it could be a beutiful collaboration across the threeriverschallenge group! thank you for inspiring us all!!
