As a native Chinese, here's what I think of "American Chinese Food". Conclusion: it is authentic Chinese food. Reasoning: when we look at different styles of Chinese food, they are usually a collection of cuisine that helps Chinese people 1)adapt to the environment using local ingredients. eg, Sichuan and Hunan are humid places, so we add a lot of chili in Sichuan and Hunan cuisine; while northwest is where most wheat at, so carbs are the main topic of northern China cuisine; 2)blend in local culture so we can survive and thrive. Little may know that kungpao chicken was original invented by a northerner Chinese imperial officer who was assigned to Sichuan province. Our ancestors came to the states 150 years ago, building railroads across the nation and facing racist immigrant regulation. "American Chinese Food" is how they best utilized local ingredients (eg, orange chicken: large-chunk of chicken white meat, deep-fried, adjusted to local taste with sweet and sour sauce) to survive, to raise their children and to build Chinese legacy on another side of earth. I'd say I have mad respect for tasty "American Chinese Food". It should be in the same bracket with other styles of authentic Chinese food for each one of them demonstrates the spirit of our culture in different ways.

the Fung Brothers bring a lot of energy with humor and its nice to know that these are two guys who know what their talking about. .its too bad you guys didn't make a trip in Charlotte,NC to the Dim Sum Restaurant, it recently closed down but back in 2015 it was going strong and reopened under a new owner in 2017.I am not Chinese but American Born Japanese, I have been to several Dim Sum restaurants when i lived in Chicago. In Charlotte the Dim Sum Restaurant was very comparable, and yes, the ladies who served brought steaming hot carts to the tables and all Chinese...not born in the US .i know Jeremy Lin in 2017 is no longer here but if you ever come back to Charlotte,NC ,the place might be nice to try , it has reached the previous owners level of good dim sum. Im a 3rd generation Australian - chinese, irish, german. My dad cooks traditional Canton soups, like Say young Choy Tong, watercress, jook. But other nights he would cook a stir fry with rice as the base... Years ago he would cook individual dishes but times change..

Orange Chicken in Chinese is 陳皮雞 (Cantonese: chun pei gai Mandarin: Chénpí jī). Not that uncommon, since 陳皮 (orange/citrus peel) is used in a various dishes and soups!

One of my greatest disappointments in a Chinese restaurant is when the General Tso's Chicken is just Sesame Chicken without the sesame seeds instead of its own zesty, slightly spicier flavor.

I'm not chinese so my first experience with chinese food was the fake take out version which I thought was real then when I got older I went to an authentic chinese resturant and the flavors were too bold for me so tbh I prefer this kind of Chinese food :P

I had the opposite experience. Usually authentic Chinese food is milder unless you go for the stuff that is purposely spicy or salty. I think where it seems bolder is a lot of times you can taste each individual ingredient which is quite a shock. Asian-American food on the other hand is a lot saltier in general and the flavors are more in your face to fit the american palette. I should actually say flavor without the "s" as it's mainly salt and soy sauce though. They aren't very good at highlighting other Asian ingredients.

China is known for the biggest knock-offs and counterfeit items too so I don't see why the hate over the American Chinese food either. It might not be authentic but most of these foods are also fast food.
