i'm guessing gordon wasn't making that comment about the quality of the dish but more from a business standpoint... if you put in "too much" seafood, you're not gonna make a profit from that dish and when people come back, as you stated you would, for that specific dish, the business is going to lose even more money
@15Stratos2 жыл бұрын

The "sauce" in Linguini Pescatore is traditionally much thinner, because it is mostly a white wine tomato sauce. Altho there are endless interpretations, most basic recipes calls for 6-8 ounces of white wine to only 2 tablespoons of tomato sauce. That's it- 2 tablespoons, so the dish actually looks perfect. Also, as the abundance of seafood cooks in the white wine, it will release alot of juices/liquid from the seafood which is key, and then it's finished with a little bit of tomato sauce at the end. The dish is not a sauce heavy pasta dish, but rather a "fresh", light seafood pasta dish. You want to enjoy the fresh seafood without any heavy sauce overpowering it.
@PresidentOfTheUSA2 жыл бұрын
the taste probably comes down to the quality of sea food then.
@ItaliaPonticorvo2 жыл бұрын
@@PresidentOfTheUSA yes. That’s why you want top quality seafood. Because the natural freshness of the seafood is what makes the sauce

I feel like there are just places that are able to manage better as a small hole in the wall type restaurant than having a whole establishment to consider extremities like design, the atmosphere, layout, bar, if there’s seating areas close to kitchen and if you want it to have a partial open kitchen for ppl to see the chefs at work, how many waiters and servers for each section, etc. Sometimes smaller is better depending on the people owning it and working there with what they can manage when it’s busy and if they know what they could be doing when it’s not.

As a fisherman's daughter, I will say even the freshest squid, octopus, or anything along those lines are naturally on the "rubbery" side. Now if you could barely cut it and had to almost swallow it whole, that's a bad sign. But it didn't look like that with the calamari nor the pasta dish

This is American-Italian food. Aka, food made by Italian immigrants in the late 40's. In an odd way, it does make them technically Italian even if they're not traditional Italian food. I'm sure working Italians made garlic knots so be a spin-off/easier way to make garlic bread. Either way, you can't deny it's impact even if it is American-Italian cuisine. And at the end of the day, it's a bread knot. Don't get so insulted.
