Difference between Dhokla and Khaman: Dhokla is a little bit hard and it is made with rice and chickpeas. Khaman is very lighter, fluffy and soft. It is made with chickpeas only.

Instant ones that are drenched in sugar syrup are called Khaman (only besan is used for that) those are superrr soft And the ones that are made with fermented rice flour and chana daal are called Dhokla

Shivesh bhaiya actually khaman you can prepare with besan itself.. But for dhokla you have to pre soak rice and chana dal in buttermilk and then after 4-5 hours we blend it and keep it in warm place for fermentation and then steam it both have completely different texture
