"Adobo" is also the name of a cooking style in my home country in Peru and is similar. i believe that the coincidence of the names here am Philipinas is because we both were colony from Spain so we have inherited this way of cooking.
@lonetraderph19112 жыл бұрын
yes, its actually derived from the spanish word adobar which means to marinate
@AngryKittens2 жыл бұрын
Not really. It's a generic name. It just means "marinade" and thus could apply to any marinated dish. The method we call "adobo" in the Philippines uses completely native ingredients and is pre-colonial in origin - black pepper, vineger, salt/soy sauce, garlic, and malabar laurel. It's very different from Spanish or Latin American adobo. Only the name is Spanish. There are numerous other examples of these, I'll enumerate some: 1. We call roast whole pig by the Spanish name "Lechon", even though roast whole pigs are a pre-colonial dish, and are cooked completely differently from how it's cooked in Spain/Latin America, with the use of ingredients like lemongrass or batuan fruits. Pigs are one of the ancestral domesticated animals of the Austronesian ancestors of Filipinos. 2. "Sopas", a Filipino dish whose name comes from Spanish for "soups." Despite the name, it actually originates from the American chicken macaroni soup. 3. "Arroz caldo", which in Spanish means "rice broth", but it is actually the Filipino version of the Chinese congee. 4. "Turron", which despite the name is actually a dessert lumpia with bananas, jackfruit, covered in caramelized sugar. 5. "Asado", which in Spain and Latin America means barbecues or grilled meat, but in the Philippines, it means a type of slow-cooked braised dish with a sweet sauce. Just because something has a Spanish name, doesn't mean it is of Spanish origin. We spoke Spanish, therefore we gave Spanish names to local dishes as well. Especially since in pre-colonial Filipino culture, we did not name specific dishes. Instead we named cooking _methods,_ regardless of ingredients. It was easier to just use a Spanish name when dishes became more and more standardized. Even though today, "adobo" can still be used to cook anything from chicken to pork to goat to vegetables to squid to smoked fish. We do have dishes that are of Spanish/Latin American origin. Some of them modified over the centuries. Like "champorado" which is sweet rice gruel with chocolate in the Philippines, but a drink with chocolate and corn flour in Mexico. Or the various types of chorizos/longanizas that we have. Or more common dishes like hams, paella, escabeche, empanada, and baked goods or pastries like churros, bunuelos, barquillos, various types of cookies, breads, and cakes, etc.
@rmv21852 жыл бұрын
@@AngryKittens Very interesting your comments. I see, there are some dishes native from Philippines but with Spanish names, nevertheless, there are others that are directly of spanish origin. I am very impressed about the escabeche you mention, because we prepare it too, nevertheless, we have another dish which is similar only that it has a thick broath, that is called "sudado" and means "sweaty".
@AngryKittens2 жыл бұрын
@@rmv2185 Your ceviche is very similar to our kinilaw (literally means "eaten raw"). Though ours is pre-colonial in origin (citruses are native to Southeast Asia), and is present in neighboring related Austronesian cultures, like the Malaysian Hinava, the Chamorro Kelaguen, the Polynesian 'Ota 'Ika, etc.
@ryanjuguilon2132 жыл бұрын
@@AngryKittens Thank God someone says this. I just roll my eyes whenever some wanna-be westernern Filipino would claim these dishes as hispanic, or that we ourselves are hispanic. If we are going to claim foreign blood, then I am afraid we aside from being austronesian, our bigger gene contributor are the Chinese. The Spanish hardly contributed anything to our gene pool

The triangular dumpling at 8:20 is a traditional Chinese food. Legend has it that an incorruptible official named Qu Yuan, got slandered and committed suicide in a river. When they heard of Qu Yuan's death, the locals were sad and rowed out on the river to search for his body. They were unable to find him. To preserve his body, the locals paddled their boats up and down the river, hitting the water with their paddles and beating drums to scare evil spirits away. They threw lumps of rice (the triangular shaped dumplings) into the river to feed the fish, so that they would not eat Qu Yuan's body. Thus, these dumplings are still being made today to commemorate the festival.

8:20 that's what we called "Bringhe" you could experience the best bringhe in pampanga or here in tarlac. That is one of our breakfast food or almusal in tagalog 😊 partnered with coffee. Ohh yum!

Given that he's in chinatown, it's more appropriate to refer to it as Machang/Zhongzi :) Bringhe is spanish influenced, and has more turmeric and coconut milk than the soy sauce the machang has.

Yea I remember when I was in the province... They "kilaw" sea cucumber which is raw sliced drenched in vinegar with salt, calamansi, onions and ginger... Its like bubblegum consistency but tastes good the more you chew it.... Of course kilaw it like 30 mins before eating or some parts are still moving
