Q: Are you just butt-hurt that someone made fun of you for ordering your curry mild? A: Chillax. Though I do sincerely believe the argument I made in this video, I intend that argument to primarily serve as an amusing framework for us all to learn some interesting science about why chilies make us feel the way they do. I consider these Monday (or, in this case, Tuesday, due to administrative delay) videos to be journalism, and I think one defining aspect of journalism as a form of communication is that its primary function is to inform, rather than to persuade. You can write an opinion piece where you're trying to persuade people to see things the way you do, but that mission should be secondary to the primary goal of giving them enough information to come to their own conclusions. I think I gave you plenty of information in this video to come to an opposing viewpoint. Eat what you like to eat, and be more informed in the act. Q: Why are you using plastic products a week after you told us that food plastics are messing with our hormones? kzbin.info/www/bejne/eHrZeaV5lNKGla8 A: We make choices in life in which we have to balance many competing interests. Based on what I learned making that video, I've chosen to replace most of my reusable food containers with glass, and to stop microwaving my plastics, but I don't think it's feasible to banish all food plastics from my diet, and even if it was, there are other interests to consider. This is purely a guess, but I would guess the net effect of food plastics has been to make our food supply safer, even when taking endocrine disruption into account. Also, I love canned tomatoes, and would probably eat them even if I knew they would literally kill me. I gave you some information; make your own choices with that info, and I'll make mine. Q: But seriously, why did you turn a science video into an argument about toxic masculinity? A: You may laugh, but I suddenly find myself in the position of being a 37-year-old man with a large audience of much younger men. I am seriously worried about the concepts of masculinity that I see metastasizing among young men these days (especially in certain online communities), and I feel an obligation to offer a model of masculinity that I believe is better for the world. I know that when I was a teenager, the male role models society offered to me were either the same-old unenlightened meatheads or painfully ineffectual and unsexy '90s men. I had no idea how to navigate between those two extremes until I found two male role models who taught me, in large measure, how to be the man I try to be today: Henry Rollins and Anthony Bourdain. It's possible to be an enlightened bad-ass - to care about other people's feelings, to be smart, to be nurturing, and also to be resilient, assertive and, frankly, fuckable. I learned that from Hank and Tony, and if I can pass that wisdom to others, I will. The kitchen is a place where I think a lot of these issues come up.

Eating spicy is like drinking beer, if you can get accustomed to it, there's a whole new world of flavors to explore and enjoy. You don't have to try and show off consuming something that is unbearable, but if you explore a bit outside your comfort zone and play the long game, there is much culinary reward to be had.

It's interesting to me that India, as well as other places known for fantastically spicy food such as Malaysia, Singapore, Indonesia, etc... didn't even have chili peppers until after North America was discovered. It seemed so embedded in the cuisine that one would think it was always that way. Chilies come from Mexico.
@hv9988

They didn't have chili peppers, but they did have other (edit: chemically related) "peppers" Black pepper is native to India and prickly ash shrub (Szechuan pepper) is native to Taiwan and China. They also attach to the same receptor for a similar response. There are some others - but those two I know off the top of my head because I used them a lot in my Chinese and Indian cooking (garam masala with black pepper FTW!)

@@_Ciiitron_ Black pepper uses the old world definition of pepper, the meaning shifted after the new world "discovery" (if you don't count all the people already there eating them) of chili peppers. The same way the word "gay" still technically means happy but isn't used like that anymore. In any case black pepper is a stone fruit which contains no capsaicin, closer in the plant family tree to an apricot than a chili.

I've always enjoyed spicy food, but a few years ago I decided to try to see if I can really build up tolerance to spicy foods. A local wing place had ridiculously spicy wings so I started a few levels down from the top and slowly, over the course of a couple months, worked my way up to the spiciest. Then I took their challenge which was to eat 12 wings way spicier than even their spiciest wings on the regular menu. It was really spicy but I easily managed to do it and my name is now on a plaque in the restaurant. Then I took another Indian food's spicy challenge and easily did that also. Then I went back to eating normal levels of spice. Now when I go back to that wing place I can no longer handle more than 3 levels down from the top spice.

Can relate. There used to be a meetup across the street from a local university. This chicken restaurant had something like 15 levels of heat. I hated eating there but sometimes I didn't have time for dinner. The problem is their spice tasted like total ass, absolutely horrible. The best tasting flavor they had was 1 level down from the highest heat that you had to sign a permit to eat, so I'd get that. People would make comments about it, because it was hot enough to inflame my lips and nose visibly. But like god damn, it was the only flavor that was somewhat reasonable there.

When I cooked, I took that into account girlfriends lower tolerance.

So, you fell victim to what Dr. Burns described as extrinsic rewards, getting positive attention because of your behavior, not intrinsic reward because you actually liked it just for yourself. His point is that that is kind of woosie. A truly confident and secure man wouldn't need to do that. It's similar to teenagers 'burning rubber" or making their car super loud to "show" how important they are when they aren't. Kind of embarrassing, really.

I think there is a reason to desensitize yourself, except for wanting to be a bad ass. If you can take a lot of heat, you can actually taste the different kinds of chili, so you open up your palate to a wider range of flavors. That being said, most chilis I eat for their flavor are actually in the low to medium spice range, and even the hotter ones are manageable when you remove the seeds and the white stuff.

One strange thing is my first job was at one of those gas station restaurants. It was a combo pizza/sub shop. They had pickled jalapeno as toppings. I remember being allowed a meal every 4-6 hours (so on an 8 hour shift, 2 was fine). Over time I did work at desensitizing myself to heat by adding more and more jalapeno to things. By the time I left the job, my tolerance was very high. The reason? My favorite salsa at the time, the one with my favorite flavor, was far too hot for me to enjoy. By the time I was done, I remember sweating but I loved the flavor of it and wanted to increase my tolerance. So yup. I did train my tolerance as a teenager. And it is high now. As an adult it is very high now. Probably too high. I have friends ask me if something is spicy and at times I have to just say "I don't know" simply because I don't want to set someone up for discomfort. Over time, my wife being around me has slowly increased her tolerance. I remember when we first got married that even adding a small pinch of pepper flakes to a pasta sauce would leave her sticking out her tongue and saying "It's too hot" with a lisp (because she was sticking her tongue out). After dealing with my cooking for nearly 17 years, dealing with me steadily adding a bit more heat over time when cooking certain foods from certain cultures, I would argue that her tolerance is up to tolerating what I would consider the line between mild and medium. Which is perfect. That means that "mostly cleaned" mild to medium chilis are good for her. Medium curries are fine with her (maybe with a bit of yogurt if I overdo it a bit). She does not even notice the pepper flakes in a pasta sauce (other than maybe the smell if I let them toast before adding oil). She did not attempt to "train her pallet" to put up with my shenanigans. Just that slow exposure. I did, not to look or act tough, but to be able to handle the burn from a flavor I liked as a teenager. The thing is my tolerance is high. I remember training it to be high. I sometimes do give close friends grief about eating mild but it is only close friends that would know I am kidding. I know I am not tougher than, for example my wife. Sure. I go through serrano chilis quickly and used to buy 1 gallon jugs of sambal paste and know that sriracha is sweet. But my wife is the bad ass in the house. Last winter before the stay at home orders she was riding 200 miles on her bicycle over the course of 12 hours. I had done as much as 101 and could not imagine thinking "Cool. Now let's turn around and go home." Me eating chilis just means I am less likely to get burned if I eat an Indian or Thai restaurant and am not careful. But her? Training to be able to maintain aerobic activity for 12 hours in a single day? Yeah. "Oh look at me. I can eat this chili" versus her now considering how far she can go before sleeplessness becomes a problem or considering an Iron Man because "the bike part would be easy".

It's funny how people very often describe evolution in terms of "chili plants evolved capsaicin in order to prevent their seeds from being destroyed in the stomachs of mammals" and not the more correct "chili plants that randomly mutated into having capsaicin survived because their seeds were less likely to be destroyed". I'm sure most people (and Adam) know that the second one's the correct explanation, but it seems like the idea of evolutionary patterns having some sort of intent and not being a result of chance lives on our in daily language about the phenomenon. Just an extremely exciting observation

I couldn’t agree more. It drives me crazy when someone says. X evolved to do Y. That isn’t how things work. I wish scientists, and laymen like myself, would stick to the truth as you’ve pointed out. Gene mutations have historically almost always been “random”. If that random mutation is beneficial, then that offspring is more likely to survive and procreate. It’s nothing more than that. Pretending that there is some kind of greater “intelligence” directing the evolution of plants, cells, animals etc., seemingly by “choosing to evolve a certain way”, is a weird, almost belief like way to interpret science. It’s misleading and leads to an improper understanding of how the world around us works.

I relate to the "it makes you tough" mindset, and I understand why it's ultimately kind of a silly thing to pursue. But another major reason why I still try to maintain a certain tolerance for spicy food is because I want to continue being able to eat the spicy food of friends from other cultures. When I visited South Korea, I was very happy that I had already become accustomed to a high level of spice (through eating spicy often with my Korean friends) so I could tolerate and enjoy a lot of the food while I was there.

If your mouth doesn't go so numb you can barely talk for 5+ minutes or snot doesn't run out of your nose while your forehead sweats (while your mouth is in considerable "pain") then there's not much reason to ask for accommodation. This is basically the level of spicy pain regularly experienced by those who actually like the stuff. That should be your threshold for too hot imo. There are higher levels too - feeling like you're going to die as your heart beats out of your chest and your mouth won't cool down to a functional level for 30 minutes. This is what we expect when someone who isn't good with spicy food tries it, because we're already experiencing near-snot levels of heat. But it very rarely happens, their tongue might go a bit numb, same as most people.

"Physically adapting yourself to capsaicin allows you to do, what, exactly?" I'll preface my comment with this: I'm about as much of a badass as your average toddler (and I'm quite happy with that, thanks), and I certainly don't think I'm more of a man because I eat spicy food. I also couldn't care less if people are "impressed" by me eating spicy food or not. But physically adapting myself to capsaicin allows me to experience the full flavor of different chilies without said flavor being drowned out by the heat. I love the actual taste of chili (and I do experience a mild "high" if I eat incredibly spicy food but that's beside the point), so I use a lot of really hot chilies in my cooking. I've adapted to the heat to be able to really taste the flavor. And no, using less spicy chilies isn't an option, because most chilies taste quite differently from each other. For example: habaneros are quite spicy, and a few years ago I couldn't handle more than a tiny amount, so I never really learned how they actually taste. Now that I'm able to handle quite a bit of habanero, I've realised that they give a really rich, fruity flavor to my food - more than any bell pepper could ever do. It's all about enriching my culinary life.

Spearm1nt it does to an extent though. Sensitivity to peppers only explains so much. To push well beyond your current limits is incredibly painful. That’s the only way to decrease you sensitivity in the first place. Also if I eat a pepper ten times hotter it doesn’t matter if they’re half as tolerant. They eat zero spicy food and therefore can not tolerate chili and freak out even if I put a good amount of black pepper in food. To me, they miss out in a whole WORLD of culinary experiences, new tastes and sensation. And yes, being adventurous and enjoying the joy of a little bit of pain IS BADASS and likeable to me. And one of the craziest things the culinary world has to offer is Szechuan cuisine with the combination of chili pain and numbing szechuan pepper. Sticks and stones may break my bones but chains and whips excite me, to end this rant with the wise words of Riri.

As a westerner who loves spicy food, I have never, ever thought it made me seem tough. Habaneros, for example, have a wonderful sweetness once you acquire that capsaicin desensitization. I remember a time when a friend invited me over for dinner and noticed how little hot sauce I was adding to the food. "C'mon man, my girlfriend uses more than that" I'm not adding hot sauce to drown the food in heat, I'm doing it to add flavour. I think you've greatly missed talking about the endorphin rush one can get from hot food, which is a large reason for chili heads to eat food that's close to their pain tolerance. Just like part of the enjoyment of tea and coffee is the caffeine and of wine and beer is the alcohol, so is the endorphin rush part of the enjoyment with spicy food. You may like your coffee decaffeinated and your beer alcohol free, which is fine, but I don't. Same reason I don't like my hot wings mild. As for what you get out of building a tolerance to spicy food, that's quite simple. You get to actually enjoy the flavor of chilies. If your tolerance is very low you can only ever add tiny sprinkles and never get to fully experience it. And if you go really hard it can give you a real good buzz of happiness. ;)

Strong agree. Vid missed major points in effort to justify mild mouths. It’s super weird and surprising to not hear the word “endorphins” once during this video. Only heard “dopamine” once, which is NOT what I think of when I think of “chili drunk”. If your body hurts all the time from labor or whatnot, crazy spicy food actually does help to a good degree. I disagree that capsaicin desensitization is pointless. Capsaicin has many health benefits and building a tolerance to the sensation allows you to more easily get those benefits. In addition, hot chili peppers have amazing flavors that most people don't get to experience because the capsaicin overwhelms their senses. I've built up a decent tolerance over the last year by eating one fresh habenero every day after lunch. Since starting this practice I've noticed that food that used to just taste spicy like hot curry or Mexican food have a depth of flavor i never was able to notice before. I've never used it as a measure of toughness but it's definitely been a rewarding experience for me and i would not call it pointless in the least

I'm not Mexican, but I was in the same boat when I was a kid. I used to think that mild salsa was really spicy. But after slowly pushing my boundaries I've gotten to the point that I can enjoy most "mildly" spicy food, like Jalapeno poppers, Japanese Curry, Buffalo chicken wings, as well as a bunch of sauces. It's just a fact that a lot of times great flavor is combined with higher heat than we'd like. Just keep hunting for foods that are spicy but still edible and tasty, then scale it up when it becomes easy to eat. You'll get where you want before you know it!

To some, there's something inherently fun and competitive about comparing 'pain tolerances' when it comes to chilli. Chilli is relatively harmless despite the 'pain' it induces so it's a safe way to compete with friends. I had an interesting experience recently. I'd been eating a lot of noodles, and whenever I make noodles I ramp up the soup portion compared to just cooking the noodles, draining them, and mixing in the seasoning packet. I'd gotten this bag of super spicy chili flakes from a friend and, being a guy who finds genuine, private, direct pleasure from heat levels my friends & family balk at, I started putting it in my noodles. Eventually, many delicious bowls later with all those soup flavors lit up by & beautifully contrasted by that heat, the bag ran out. I then made another bowl of noodles sans chili, and found it entirely flat, dull, and lifeless. All the flavors were there, but they were dead in the water. Not because I'm such a gruff, hairy chested badass who had to have that BURN, but because the heat had become established as a base "flavor" of the dish, a necessary component to make the dish as a whole come to life, just like stuff like salt & acidity. I'd never had that experience before. Heat had always been an enjoyable, fun extra, but the food would've been perfectly fine without it. But somewhere along the line of going through that bag, semi-serious heat became an essential aspect of my noodle soup, the absence of which rendered the noodles utterly unpalatable (seriously, I had to throw that un-chili'd bowl out, it was awful). There's a difference between heat and heat, too. I love a good burn from cooking with chilis, but I can instantly identify pre-prepared meals where heat has been added through small doses of raw capsaicin extracts. I bought a big box of instant noodles off Amazon, branded & marketed as hot noodles, and they were awful. It wasn't a warm, simmering burn, it was like eating battery acid. It wasn't heat, it felt like a chemical peel inside my mouth. You can see this in every episode of Hot Ones; the guest may suffer from the heat of other hot sauces, but one and all, as far as I've seen, everyone goes "what the hell is this" when they get to the wing coated in Da Bomb. Despite only being relatively mild on the Scoville Heat Unit chart, clocking in at about 100k, compared to some of the other sauces there, people freak out because Da Bomb's heat comes from pure capsaicin extracts. Just a couple of anecdotes that came to mind when watching this video.

What you need to consider is that the research found most men who like spicy food exhibit this trait, not every man. Additionally you can still exhibit this trait subconsciously. I for example am a male and thinking about it, I realized that the pleasure I get from spicy food was in no small part to the fact that it makes me feel tougher. Even if I season the food just for myself and I never go bragging about how spicy my last meal was I feel a little tougher. All that just to say that it isn't necessary to explain that you just like spicy food without being a "tough man". Though the story is quite interesting,

We all have to question our choices from time to time, do we really like coffee and beer or are we just drug addicts etc, but ultimately, if that's they're personality type then they genuinely are gaining pleasure from the external validation. In my personal experience, I have eaten Szechwan food during the Winter and felt like I was freezing even though the temperature was above freezing. In China, the northern regions have milder cuisines while those closer to the Equator have the spiciest ones. It's not entirely about food spoilage. I noticed that certain friends sweat a LOT when they eat chili and since sweat cools the body down, i realized that eating chili in hot weather makes perfect sense. I don't sweat when i eat spicy food so there's a genetic component too and that's what I'd like to learn about. I wonder if our current geography matters, or whether it's our ancestors. Side note, i did see a study that suggested a correlation between "Asian flush" (the red face that some Asians gets while drinking alcohol) and sensitivity to chili. The study also suggested people with the flush have a lower pain tolerance overall. There's definitely some connections in there 🤔

The strongest reason for building capsaicin tolerance is to broaden your palate, so you can appreciate the diversity of different kinds of chili, without being overwhelmed by the heat. A Korean hot sauce is very different from a Thai hot sauce, which is very different from a Indonesian hot sauce. Unless you have a high tolerance, you will just think of all of them as too hot to handle, and go with something generic like Sriracha (after diluting with mayo or something).

Being able to withstand intense pain from food is tough. Doesn't make someone a "tough guy", but people are naturally impressed when they see someone tolerate something so painful to them.

Szriko honestly any sauce that says mild tastes like ketchup. I remember even as a kid knowing that it wasn’t that spicy. That’s coming from a super vanilla white boy as a kid who likes his Indian food to actually be at least Indian level heat.

I'm really loving the things I'm learning from this channel. That thing about lowering the temperature "threshold" really helps to explain a few things. For example, I noticed the spiciness was more intense when the food was physically hotter, and ice cream seemed to be really effective at easing the burn. That said, I have 2 questions: 1) How come when I burn myself, it keeps becoming painfully hot afterwards? Is this some kind of heat sensitivity, similar to the spicy effect? 2) Does mint/menthol have the reverse effect - i.e. having an effect on cold receptors?
@0106johnny

Menthol indeed has somewhat of the opposite effect, it affects the TRPM8 receptor, which is there to feel cold.
