For British guys - the closest dairy product to kajmak is Cornish or Devonshire clotted cream. The process of making is identical - scooping the clot that is formed on the top by slowly heating the milk in wide vessel. The clot is composed of high percentage of butterfat(cream), lactoalbumin particles (protein), casein( whey/ cheese protein) and moisture. The difference is that Serbian kajmak is savory, preserved by salting and slightly fermented comparing to clotted cream that is more sweet/neutral. Regards from a Food Scientist living in Chicago.

Kajmak is dificult to explane but its not cheese because its made in completely different way and its not going over the proces of filtration like cheese. It's a pity that you missed seeing the great nightlife in Novi Sad because of the corona, we are probably in the top 10 cities of nightlife in all Europe. There is also a large selection of clubs, discos, cafes,pub, and KAFANA 😊. From new commercial, electronic, music 70s and 80s, of course 90s. The food is so good, that in Novi Sad McDonalds was quite a long time on the verge of bankruptcy, as everyone would choose pljeskavica instead (for almost the same price). They survived with holding kids birthdays, and in summer selling ice cream. But for a city of 350 000 inhabitants there is still only one in town.

There is at least 10-20 different types of pies in Serbia (unrelated to stuffing), depending of specific part of Serbia. You may call burek a pie but only as a one specific type of a pie. So, it is not burek everything you can buy with cheese, meat, fruit or any other stuffing. There are only two tipes of burek you can buy in Serbia, traditional Serbian burek (flat pastry) or Bosnian burek (spiral pastry). And if you ask me, Bosnian burek is just another type of a pie, and very good one.

@@dabbleandtravel Yeah... I bet it did! : ) So... 17-18 ounces or 1.10 pounds is the big one. It is refereed to as "Elephant's ear" or "Jumbo". Whatever the local fast food shop names it. So half a pound is the regular sized patty, paired with either somun or lepinja bread types. Somun's like "pita bread" you had, but sturdier and harder to chew. You had lepinja one in the video I believe, but I'm sorry to say that it looked a bit dry even though it is the softest type. : ) Normally, for condiments you'd want a bit of cabbage, sweet onions (better if it's spring onion), and maybe some paprika. But there is no strict rule. Next time be sure to check Gurmanska pljeskavica or Punjena pljeskavica. It is all healthy meat, organic, and possibly safest you can find in all of Europe bar maybe Spain. If you get a chance, check out different types of bacon you can get here in local butcheries that run a family business. Cheers
