I cut and freeze my celery too! Since I only use celery for soup freezing it is the best way to make sure it doesn't go to waste. Plus, it last a long time in the freezer. I try to buy it went it's on sale.

Looks good. (And my kitchen is just like yours!) My crew likes cubed chicken over shredded so I partially thaw (or partially freeze) the meat and it's easy to cut into cubes. And then I use the saute setting on the Instant Pot and brown it before adding the liquid. Another option for thickening is to blenderize potatoes in water and add that for thickener. It works great when you don't have corn starch and/or prefer not to use wheat. Another trick for homemade broth is to blenderize fresh onion, fresh garlic, a little celery and little curry seasoning (plus salt to taste). It's a great alternative to broth.

The celery leaves add a lot of flavour to soups and stews. I also like a leek to add a gentle onion flavour.

I will make the chicken pot pie soup this week and half it for 2 people. I finally bought a special glove from Amazon to wear when cutting and peeling. No matter how careful I am, I cut myself every once in a while, or ruin my manicure. I've been cooking for years but I'm a natural klutz! Thanks for the yummy recipe!!
