I have to try this. Most recipes on youtube call for chicken breast, which is about as flavorful as a wad of toilet paper. Yours sounds great.

Would you recommend adding all the drippings from that pan into the crockpot as well? Or woukd that make it too greasy?

Cool the pan drippings, scrape off the fat. The remaining jelly is great for the soup stock.

Is there any liquid to rice ratio that I should follow for this? For example, if I use 2 cups of rice, how much liquid should I use? Will it be a 1:1 ratio (2 cups of liquid for 2 cups of rice)? Thanks!

I would say 1-1 ratio. If t feels weird since normally it is a 1-2 ratio but this will prefer the rice from being mushy

I do a similar recipe in the oven that uses equal amounts of liquid to rice and it's one of our favorites. I'm thinking it's because the chicken thighs produce moisture/liquid into the equation. I really don't know, but it works!

Cooking in the crock pot is different as not as much liquid cooks off so we don't use as much liquid when cooking rice in the crock pot.
