Thanks for the video! It is hard to find videos for LQR models about MIMO systems.

When you say that polenplacement does not work when there's multiple inputs, I assume that you mean that Ackermann's formula doesn't work, there are several other algorithms for pole placement that work just fine in the presence of multiple inputs.
