At one point you mention that there is an option to just cut the yarn. I'm afraid that the project will come apart?!

It will stay together! You can trim the yarn, and rejoin the color to another part, or just join a small ball of yarn as a bobbin instead of trimming and rejoining. Since the yarn is secure because it is already a stitch, it won’t come apart!
