I have the smaller version and left it running for 6 weeks to make (vacuum-packed) black garlic - no problems. Amazing bit of kit.

Dehydrators are indeed very useful. I prefer to use cold dehydration (room temperature, not refrigerated) for my fresh ingredients (vegetables etc) rather than using heat. It takes longer but the result I find is truer to the original. I made my own from a box fan and a stack of HVAC filters clamped on top of it with a bungee cord - it's cheap[ and effective. I didn't invent this, I stole the idea from Alton Brown. :) I'm currently using it to dry my harvest of hot peppers.

I've been using Excalibur for three decades now and I just bought my second one, the first died due to a faulty socket. I cannot recommend them enough.

You cannot do the same with an oven since you cannot get the very low temperature that I need for food dehydrate. Also, you cannot get the even heat flow with an oven that you need. An oven is just not the same as using a dehydrator.

You can use an oven and a wooden cooking spoon to do the same thing. That’s why it doesn’t get so much attention! You can go up to 105C when dehydrating. That is temperature that gets used in a lot of laboratories.

That's too hot to dehydrate sourdough starter for storage; you want it under 40C ideally.
