Edible & Delicious Spicy Chicken Gizzards served with rice is a favorite food in the Caribbean.
How I prepared my chicken gizzards dish:
1. Wash the meat; then add 1/2 lemon juice along with 1 tsp salt.
2. Place in slow cooker and simmer on high for about 1.5 hours (optional)
3. Combine 1/2 tsp all purpose seasoning, 1/4 tsp black pepper, 1/4 tsp cayenne pepper, 1 tsp curry
4. Add mixture to the chicken gizzard and marinate for 10 minutes
5. Preheat skillet; add 2 tbsp vegetable oil
6. Caramelize 1 tbsp sugar
7. Saute onions; stir occasionally
8. Add 1 tbsp minced garlic and 1 tsp grated ginger
9. Add 1/4 cup diced red bell pepper
10. Add the chicken gizzard
11. Place lid then let simmer on medium heat until gravy thickens.
12. Add tomato and chopped parsley. Let simmer on medium heat for another 5 minutes.
