Decades ago a friend did this. He bought large old saw blades (like 36"). Then he would take months drawing blade shapes, with welders chalk. When he had used all the space on a blade, he would pay me for the oxy/acetylene gas I needed to cut out all the shapes. Then spend months making all the knives(daggers/swords). Some years later he gave me one that he had over estimated. I was a few inches taller than he, and this one was too big for him. Holding it while standing, the tip of the blade was dragging on the ground. It was a Philippine "barong", at least 30" long. It didn't actually fit being called a knife or even sword anymore. Just a scary weapon.

Magnifique Monsieur edward. Merci.

You do not want to use the angle grinder for cutting out the cutting edge side of the blade. Heat from cutting will cause degradation of steel quality in this critical zone.
