Dutch make the best bricklayers. However, why do they flick the mortar back in the bucket after they laid a brick? Here in england they use it to perp the next brick. It's quicker and u always have a full crossjoint.

An experienced bricklayer has a feel for scooping up rougly the same amount of mortar with his ''troffel''. This helps him keeping his bedjoint at the same thickness. I guess using the excess mortar on the next brick would interrupt that process.
