A good way to churn at home is to blend up some dry ice then slowly add it to a stand mixer while churning with the paddle attachment; we will have a good video of that technique coming up soon!

I am curious what if i were suppose to this cook this over a stove top until what temp would you recommend that the mix needs to be brought to activate the powders ?

can you put some videos for how much pressure vacuum chamber and sealing time, for liquid, fish, meat and poultry? sometimes , its hard to make it precise especially delicate product. for example, fish , if its too hard, the fish gonna be pressed and broken when you open it, or translucent fruit, if not enough pressure , there some center of the fruit is not translucent. thanks.

You don't have to. I've done this with only xanthan and it still came out pretty good. Have you gotten around it since it's been a month?

Curious as to the reasoning behind using the stabilizers as opposed to egg, I understand their use in dairy-free ice cream but you guys use whole milk so I was unsure as to the benefits of this method as opposed to an egg based ice cream.

Firstly these stabilizers are better at crystal suppression, yeilding a smoother texture. Eggs give a very rich, creamy flavor to ice cream. This is good and bad. The flavor on its own can be good but it can also mask more delicate flavours. Eggs also give the ice cream a yellow color which is sometimes undesirable.

no, just put mixture into a ziplock bag, and cook in a simmering pot of water for around 45 min

Grant spear fishes a lot of the coast of Washington, probably some wear and tear from his expeditions...... either that or he punched out the ice cream man and stole his supplies....:)

The paco jet ice cream maker he is using is 6000 bucks , regular machines won’t come close

I reckon a Ninja Creami would do the job. I've seen videos of people using that thing to make ice cream out of the oddest things...

@@coolfunkykitkat It’s the texture and the creaminess is where the real difference lies in any kind of machine, a top down churner or the compressor ones or the ones where one freezes the bowl.

@@adam69e Everyone needs to constantly update their knowledge. Besides, you can use any other ice cream machine you want as it states in the video. Have you seen the new Ninja Creami, which is a much cheaper version of the Pacojet?
