Milk, eggs, and sugar: this is all you need to make true gelato. And yet, finding this simplicity in Italy is not as obvious as you may think. I visited Mokambo Gelateria, a gelato shop in Ruvo di Puglia, Italy. Ruvo is a small, pretty anonymous town to you guys watching abroad, but two local siblings, Vincenzo and Giuliana Paparella, have transformed it into the true gelato capital of Italy. At Mokambo, gelato is made from a 180-year-old family recipe.
