It depends on the restaurant really. But a place like this, where they basically do all the preparing and cutting themselves, to truly have fresh ingrredients? Yea that's a LOT of work. And they make it look so easy and fast too. Clearly people that have mastered their craft, even if said craft wouldn't register as "worthy of mastering" by the average person.
I used to work as a chef and love cooking. This is one of the best chefs I've seen on this channel, he seems very skilled (wok and knife skills stick out!), focused and keeps tasting the different steps of cooking. Really great to watch! Please send my regards to the chef.

@@john.t6351 People used left over rice for fried rice because the refrigerator sucks the moisture out of the rice overnight. He uses a dehydrator on fresh rice to do the same thing faster.
I love that the kitchen is open. Nothing to hide. And I can see why. Everything was fresh and the crew are pros.

So satisfying to watch. Wok & knife skills are impeccable. I would love to visit this restaurant one day with my family when we head to Japan. It’s so therapeutic and also impressive that the kitchen is so quiet. No shouting etc. This is no ordinary chef. This is a master of his craft. I need to know where this restaurant is.

the small open kitchen working flawlessly together is a thing of beauty.
I feel for the chef. He must’ve been exhausted at the end of the day but I know he’s happy how the customers are enjoying his food. Whenever I cook 4 dishes for my family, man I’m deadbeat. Thank you to all our hard-working chefs! You inspire me took different style of food.

Go to China. Like legit I've heard of a restaurant there that serves 100 pax and it's only just 2 cooks and just about 20 waiters on the floor. Chinese cuisine is nothing more than barbaric cooking. I should know because I cook it myself lol. Before ya'll bash on me, Chugoku means China in Japanese. Meaning it's a Chinese bistro.

@@Xind0898 Believe me I have seen most of it. From my ancestral town in the Fujian province to Beijing. And Sichuan included. It lacks that finesse from French of course. But it is barbaric. Basically toss stuff in a wok and that's that. Whereas in French cuisine you have to pay every attention to detail as it is painstaking as it is. It's what I love about being a Chinese chef. The cooking style is simplistic and barbaric in the culinary scene
I've worked in a ramen shop before, not as a cook but line prep, VERY similar style to this. I learned a lot but man is it a lot of work. Working in a small restaurant that gets a lot of business is tiring work. You have to LOVE cooking or just food in general in order to work at a hectic place because it will get busy and you are going to have to help out however you can. The faster you learn the better. I am glad I quit that place but I have SO much respect for restaurants like these because I know what it's like working at them. Much love and respect to the cook and the other workers there, we appreciate them so much and I thank them for doing what they do.

Thanks to my uncultured family I have no ability to appreciate the flavors or ingredients food like this would showcase. Life is not fair. It all looks so colorful and so much variety. The best I could do is eat the meat products and the rice. I'd force myself to eat this till I liked it.. Looks amazing.

As someone who works in a restaurant: It's a really hard job. So much to take into account. Cooking times, progress for dishes for people working under you, keeping all of the tickets you still have in mind, making sure all of it runs smoothly and on time. And at the end of the day you still have cleaning to do, and after that doing check-up of all your inventory and making orders for ingredients and the like for the next 2~3 days. It's the reason I've deliberately chosen to not aim for becoming a head chef. I'll stick to just being a cook, or maybe sous-chef in the future. Not only am I not cut out to be a leader, but it's also just so much work and so many extra hours outside of just the cooking part. Mad respect for any chef really.
