l love eggplants or any other vegetable (l don't care for Meat) any which way. l didn't think to make them as fries, which l will make next time. l cut my eggplants round and leave the skin on and l also dip them into bread crumbs besides the flour and eggs. You are lucky you don't have to go out to get your eggplants l have to go to the farmers market. It's not a bad trip since it's only 20 minutes from my house, and l get to walk around the flea market. l bet your fries would be good with a nice sauce to dip them in. Beside baking with them l enjoy a good eggplant sandwich with nice bread and smoked mozzarella. Have a great week!
