Eggless LEMON CURD! So creamy, you can't tell it's without eggs!

In this video I'll be showing you how to make a creamy, delicious lemon curd that doesn't have any eggs in it, AND it's just as good, if not better than an original lemon curd with eggs!

INGREDIENTS:
1 tbsp lemon zest
¾ cup (184 g) fresh lemon juice - about 5 lemons
¾ cup (150 g) sugar
¼ cup (30 g) cornstarch
¾ cup (175 g) milk
½ tsp vanilla essence/extract
½ cup (113 g) unsalted butter - cold and cut in cubes
1 drop (1 drop) yellow gel colour or pinch of turmeric - OPTIONAL
*You can use water instead, your lemon curd will just be a little less creamy, but still delicious! 😃

A recipe from you without egg ? Hmm, I wonder why ;) That sounds delicious ! It gives me 2 ideas (that I haven’t tested yet) : - what if you stop just before adding butter, and you gentle add whipped cream instead ? Kind of a cream « mousseline » - what if you let it evaporate a little bit longer, until it becomes a paste ? That would be a milky loukoum ; and then a bit of butter… that would be an insert in an entremets Please, please don’t get me wrong ! I’m not saying that my ideas are better ! I’m saying that recipe got me daydreaming…

Hello! I love lemons, lemon flavor, lemon filling, lemon marmalade, I've even eaten lemons raw. I add lemon juice to water and most other juices to give it a little extra kick. I just watched this and your other lemon curd video and have a question. What does the sugar add to the recipe? Is there a certain chemical reaction that helps the curd set? Or is it strictly for flavor? What happens if you make a sugar-free lemon curd? Is it super potent and flavorful?

Good question! It's pretty lemony as is, so I probably wouldn't recommend adding more lemon flavour, maybe just omit the vanilla if you prefer not to use it :)
