HI Miriam I love your cooking videos and the way you explain. i have a remark to do though on the Hawawshi video clip , There is a very major ingrediant that you missed it is cumin . I grew up with 2 hawashi places under my house in cairo also I used Balady bread as it absorbs and resists the fat rom the meat so the sandwich holds it self . I personaly go the extra mile of wraping the bread with parchemain paper then another wrap with news paper to give it the smoked flavor and also wraping it an in alcan foil . the parchemain protects the bread from the ink on the news paper and the alcan protects the news paper from burning , a lot of work, wraping but it is worth it at the end
