मराठी माणूस भांडतोय ...मिसळ तुझी श्रेष्ठ की माझी? तिथे पंजाबी, साऊथ इंडियन लोकांनी त्त्यांचे पदार्थ पूर्ण भारतात पसरवले. आपण अजूनही भांडतोय... खरी मिसळ तुझी का माझी.. मिसळ महाराष्ट्राबाहेर कधी जाणार??? पाव भाजी, इडली डोसा प्रमाणे मराठी माणसाची मिसळ पूर्ण भारतात व जगभरात खाल्ली गेली पाहिजे. मराठी माणसाने व्यापाक दृष्टिकोन ठेवायची गरज आहे. नाशिक-पुणे-कोल्हापूर वाल्यानी मिसळीवर आपला हक्क सांगून काहीही साध्य केलं नाहीये.

तसा मी हिमाचल प्रदेशात राहतो... हिवाळ्यात थोडाफार महाराष्ट्र-प्रवास होतो.... साहजिकच वेगवेगळ्या गावातले वेगवेगळे वैशिष्ट्यपूर्ण खाद्यपदार्थ खाल्ले जातात.... पण मराठी खाद्यसंस्कार म्हणून मिसळीचं वेगळं स्थान आहे...! तशी आधी अनेक ठिकाणची मिसळ खाल्ली होती, पण गेल्या वर्षी नाशिकमध्ये सलग राहण्याचा आणि ३-४ वेगवेगळ्या दुकानांमधली मिसळ चाखली.....! एवढं नक्की की नाशिकसारखी चविष्ट मिसळ अन्यत्र कुठेच मिळत नाही..! स्टॅम्पपॅडनं खरंच सुन्दर फिल्म बनवलीय ही.... नेमकी नाशिकची मिसळीची परम्परा समजावून सांगणारी....!! धन्यवाद...!!

स्वामीजी तुमच्याकडून अशी प्रतिक्रिया ऐकून खूपच आनंद झाला. हिमाचल मला खूप आवडतो, तिथल्या खाद्यसंस्कृतीबद्दल पण आम्हाला काही सांगा, आम्ही अशे अजून व्हिडीओज बनवू इच्छितो.

तसं पाहता पंजाब आणि हिमाचलमधील खाद्यपदार्थ जवळपास एकसारखेच, पण हिमाचलच्या खाद्यसंस्कृतिमध्ये सर्वात वैशिष्ट्यपूर्ण जेवण म्हणजे "धाम"...! लग्नकार्य असो वा एखादं धार्मिक आयोजन, त्यावेळी होणारं सामुहिक जेवण फार वेगळ्या पद्धतिचं असतं. त्यात मुख्य पदार्थ म्हणजे पानात मधोमध वाढलेला भाताचा ढीग... आणि त्याभोवती ५-७ (कधी ९ किंवा ११ सुद्धा) तोंडीलावणी.... यात मखनी दाल(उडदाची), राजमा, हरबरे घालून बसवलेली म्हाणी आणि मदरा हे आंबटगोड पातळ पदार्थ, ऋतुमानानुसार सरसों किंवा हरबऱ्याचा कोवळा पाला (पालक किंवा मुळ्याची पाने सुद्धा) यांचं ’साग’... आणि खोबरं, काजू, किसमिस वगैरे घालून केलेला ’सलोना’ नावाचा साखरेचा पातळ पाक.... हे पदार्थ असतातच..! चम्बा, कांगडा, मण्डी वगैरे जुन्या राजेशाही परम्परांनुसार त्या-त्या भागात पदार्थ आणि त्यांच्या चवींमध्ये बराच फरक सुद्धा असतो. मधोमध वाढलेल्या भाताच्या एकेका घासाला वेगवेगळ्या पदार्थात कालवून जेवण्याची पद्धत फारच वेगळी आहे... चवीच्या चोखंदळांना अत्यन्त आकर्षक वाटेल अशी..! ’धाम’चं सर्वात मोठं वैशिष्ट्य म्हणजे हा स्वयंपाक बनवणारे लोक परम्परागत स्वयंपाकीच असतात... ते स्वयंपाकापूर्वी अंघोळ करून (किंवा चक्क ओलेत्याने) ’सोवळ्यात’ स्वयंपाक करतात...! भातासकट सर्व पदार्थ शिजवण्यासाठी पितळेच्या/काशाच्या मोठ्या गोल आणि अत्यन्त चिवळ तोंडाच्या विशिष्ट आकाराच्या घागरी वापरल्या जातात. त्यात तांदूळ किंवा डाळ/राजमा/चणे आणि प्रमाणात पाणी घालून घागरीचं तोंड फडक्याने घट्ट बांधून त्या चुलीवर उकळत्या पाण्याच्या पातेल्यात बराच वेळ उलट्या ठेवल्या जातात (भाताव्यतिरिक्त बाकीच्या वस्तुंसाठी रात्रभर जवळजवळ ६-८ तासांपर्यन्त)... घागरीतील पदार्थ आतल्या वाफेवर शिजताना उलट्या घागरीत कोंडलेली वाफ कुकरचं काम करते आणि कडधान्ये अत्यन्त मऊ होईपर्यन्त शिजतात. (डोंगराळ भागात ५-७ हजार फुटाच्या उंचीवर कडधान्ये शिजणं अवघड असतं, तिथे प्राचीन काळापासूनची ही वाफ कोंडून बनवलेल्या कुकरची युक्ति फारच कौतुकाची आहे..! महत्त्वाचं म्हणजे ’धाम’च्या स्वयंपाकात कांदा-लसूण अजिबात नसतो. शुद्ध तुपात फोडणी देऊन सर्व पदार्थ तयार केले जातात. जुन्या काळात हिमाचलमध्ये पाटा-वरवंटा आणि खलबत्ता नसल्याने दगडात ओंजळीच्या आकाराचा खड्डा कोरून बनवलेली कुंडी आणि जाड लाकडाचा सोटा वापरून मसाले कुटले जातात. आता आधुनिक औजारे असली तरी ’धाम’साठी मसाले कुंडी-सोटा वापरूनच जाडेभरडे कुटले जातात, त्यांची वेगळीच चव असते..! ’धाम’च्या स्वयंपाकाची पूर्ण प्रक्रिया आणि सामुहिक जेवणावळ यांचा व्हिडिओ फारच चांगला बनू शकतो.

एकदा हिमाचलचा प्रवास करून वेगवेगळ्या भागातील (शिमला, मण्डी, कांगडा, चम्बा) "बोटी" ब्राह्मणांना (हे परंपरेने धाम वगैरेचे स्वयंपाकी असतात) भेटून त्यांच्याकडूनच जुन्या परंपरांची माहिती मिळू शकेल. नेटवर असं काही वर्णन वाचनात आलं नाही... उलट नेटवर मिळणारं ’धाम’चं बरंच वर्णन चुकीचं आहे. मुळात इथे भाज्यांचा वापर कमी.... उडीद, हरबरा, मसूर, चवळी वगैरे कडधान्ये आणि डाळींचाच वापर जास्त.... धाममध्ये तर फक्त कडधान्ये/डाळीच असतात.

Gawd !! I miss Nasik so much !! I spent my childhood and adolescent years at HAL ozar 1970- 93. Studied at Byk [1985-88], and freaked out in the lanes and bylanes of Nashik. Gorged on misal pav. I can truly vouch for the fact that Nashik has the best misal pav when compared to any other place.

1नंबर व्हिडिओ बनवले नाशिक ची मिसळ सारखी,फारच छान. मी मुबई ला राहतो पण माझा जन्म नाशिक मध्ये पंचवटी का जलेला आहे त्याचा मुळे मी लहान पणे पासून मिसळ खाऊत आलेलो आहे.मला पंचवटी ली तीन हॉटेल ची मिसळ आवडते 1 अंबिका हॉटेल( काळा रसा),२ रसवंती हॉटेल ( चॉकलेटी रासा),३ हॉटेल भगवती ( लाल रस्सा). पण आज तुमचा मुळे मला नाशिक ची वेगळी वेगळी फेमस हॉटेल पहिल्या मिळाली तर मी आता त्यात हॉटेल ची पण चव घेणार आहे .धन्यवाद.

I live in kolhapur and I have been to nashik a lot of time. I have tried a lot of misals but HANDS DOWN no one can beat Kolhapuri misal (HANDS DOWN IN CAPITAL WORDS). Even if you do a google search and you type Kolhapuri and the first suggestion you will get is Kolhapuri misal. All those people who are from nashik and says that there misal is best you need to up your taste game.

अप्रतिम व्हिडिओ... मी जन्मापासून नाशिककर आणि एक मिसळ प्रेमी असल्यामुळे मला नाशिक च्या मिसळ बद्द्ल खूप माहिती आहे. मी पुणे, मुंबई, कोल्हापूर या शहरातही मिसळ खाल्ली आहे. पण नाशिकच्या मिसळ सारखी चव कुठेच नाही. या व्हिडिओ मध्ये रविवार कारंजा वरील बाळासाहेब मिसळ चा उल्लेख नाही. या मिसळ ची खासियत म्हणजे या मिसळ मधील शेव शेवट पर्यत विरघळत नाही.

Whenever I am in Nashik I have eaten only Misal Pav for BF. Unfortunately, I don't remember names of those restaurants but all the experiences were enjoyable . Now that we have got a second home in Nashik I will try to go to some of the restos mentioned here.
