Our all time favourite rasmalai, can be had this ekadashi as well. Try out this wonderful recipe, made up of fresh soft paneer dipped in chilled sweet saffron milk with added nuts to give an amazing crunch.

Ingredients:
Making paneer:
1 litre milk
2 to 3 tbsp lemon juice
3 tbsp water
Making milk for rasmalai:
1 litre milk
1/2 cup sugar
Few saffron strands
3 tbsp milk to soak saffron strands
1/2 tsp cardomom powder
2 tbsp chopped almonds and pistachio flakes
Making sugar syrup:
2 cups sugar
6 cups water
2 cardomom pods
