when writing the dual, why we didn't use y4 and y5, why x4 and x5 become x1 and x2

why can't X3 just remain as it is? why do we have to change it to X3 = X4 - X5?

Because X3 is unrestricted and it is comes because of '=' sign and equal sign has been divided into two constraints so we need two X4 and X5
