Off the top of my head Fire Giant, Godskin Duo, Godrick, and Morgott I think can all be missed pretty easily. Godskin duo and Fire Giant both have multiple entrances and the summons dont spawn at all of them as far as I know. Morgotts is just hard to see on the ground and Godrick I think has a prerequisite to summon help.
