To solve your tuning problem with the musical Tesla coil, use your self-tuning slayer circuit, which seems to be a variant on the Hartley Oscillator, but modulate the supply voltage to it with an audio driver circuit and a power transistor. The RF will tune to the resonant frequency (as well as the many harmonics your scope indicates) and the music will drive this waveform in an amplitude-modulated manner, generating your plasma-induced audio waveforms. Take note however that you will also be broadcasting an AM signal of varying frequency smack dab in the middle of the AM Broadcast Band, and if you do this for any length of time may end up getting a visit from an FCC field agent.

Re explanation at 0.55, I don't think that's quite right. The primary needs to be tuned to whatever frequency is a quarter wavelength of the secondary coil (actually a transmission line).

Resonance is a good thing, to be sure! Q-factor ratio is another thing going on with the induction. Two resonant circuits at the same frequency 'talk' to each other in terms of energy exchange. But when there is a large mismatch in Q, there can be very large voltage induction. The Secondary is a very low Q circuit, radiating energy readily into its environment. The Primary is a high Q circuit, ringing like a bell and conserving energy. With the resonance of the two circuits matching, the ratio of Q factors can cause more induction than simple turns ratio.

Looked at the datasheet for your mosfets. It says that transistor requires 18 volts at the gate for full-on. You're only giving them 12. That's part of the reason they're getting so hot. If you pick a different mosfet, or up your gate drive voltage, your transistors should run much cooler.
