For this recipe, you will need:
🔸 Pie Crust
- 600 g All-Purpose Flour
- 280 g Butter, cold and cut into ½” sized cubes
- 10 g Salt
- 32 g Egg Yolks
- 208 g Milk, warm temperature
🔸 Pie Filling
- 480 g Sour Kimchi, chopped
- 240 g Pork Butt Slices, chopped
- 4 tsp Sugar
- 2 tsp Sesame Oil
- 2 tsp Soy Sauce
- 240 g Potatoes, washed
- 3 ½ tbsp Butter
- 2 tsp Cooking Oil
- Salt, to taste
🔸 Cooked Pork Belly
- 480 g Pork Belly
- 25 g Ginger, peeled and sliced into ~ ¼”
- 2 Shiitake Mushrooms
- 1 Onion, cut in half
- 3 Garlic Cloves, minced
- 1 tsp Ground Coffee or Instant Coffee
🔸 Gochujang Sauce
-60 g Gochujang (Korean Red Pepper Paste)
- 24 g Apple Cider
- 20 g Sugar
- 10 g Vinegar
- 4 g Sesame Oil
🔸 Egg Wash
- 1 Egg, separated
- 1 tbsp Milk
