I got a bit choked up as my dad died on Christmas day and whenever I hear all the hymns and carols, I think of him. I personally wouldn't knock through to the dining room, keep your loving room cosy & snug. I would be more tempted to knock through from kitchen to dining so you have a kitchen, dining, living spanning the back of your house. We did something similar and find we use the dining table much more!! x
