I'm from the midwest, and transplanted myself here in Houston. I had never known about Street Corn until my granddaughter had me try it. Me being a corn lover found it to be very good, and I was pleasantly surprised. I am way more open to tasting more local foods these days. Thank you for the recipe.

This is an interesting style of elote en vaso. Down in the Valley, for the most part we use mayo instead of crema. We also use lots of limon and chile piquin (non spicy) or chile habanero. Im gonna try this version asap. Thanks for the vid.

Your dominos are beautiful; thank you for showing them. I love buying folk art everywhere I go. People don't really think about it, but when we transact on the street level by barter or cash, we fight the system that has become corrupted. They can't get between us and scrape a fee from both backs if we shut them out of our business. Our local flea market has become all about food in the last few years, here in Gary, Indiana. Some have food trucks, some set up open air grills, but we love it, and so do our kids. There's a new indoor swap meet at the old thrift store on 61st and Broadway, and I hope to see the same kind of community spirit crop up there, too. I would like to see both places thrive. Food brings people together, in person. The screens are nice, but people need some real life mixed in with it. Take care, and thanks for the recipe. Cheers!

So bomb. I time my rib eyes to come off the grill at 6:30pm the same time every day the bell rings outside my block. She pulls that corn out the pot, slather that mayo, cotija, chili powder, squeeze butter. I had a date over, made her a steak, and she was so confused about the surprise and why in the world I didn't have any sides. Once that bell rang and I rest that beautiful street corn sat beside the rib eye, she understood my rule that my rib eye gets its own plate. There's no reason to be placing anything next to the steak unless you topping it with some roasted garlic nuggets or mushrooms or a whole onion with a steak knife stabbing it upright atop a cowboy cut. I may be from California, but I've hopped a train bound for Arkansas once, spent the night in Las Cruces jail, dumped my wife in the Frisco bay, debt was coming and I was still running, and I spent some time in Austin, but don't tell anyone. Steady Rollin' ya'll, you gotta throat, I gotta knife... for steak man, c'mon!
