The flatter, lacy evergreen you first cut is Balsam Fir (aka Christmas tree). The rounder tipped evergreen is a Spruce tree.

Beautiful wreaths! I agree, the crows were warning you two of a predator threat. They're amazing birds and most likely see how well you take care of your "flock" and wanted to help keep you safe. Such a lovely Homestead you have 🙂

Young growth Douglas Fir is lovely and Douglas Fir. The really prickly branches might be Sitka Sprue. They are like needles, at least mine are on our place. Cedar is soft and loppy and good for swagging or anything really. It is more flat branches that droop a bit. Hemlock can be soft but ours are more sparce where the Douglas Fir is fluffier and a bit thicker. I share your idea on using your own resources. You can probably find your own tree on your property. Enjoy foraging! It can give you tons of ideas. Also cedar branches laid outside of the dog houses etc will help detour ticks, fleas and the like. Blessings and enjoy

Soft branch spruce is called a fir 🌲 tree and are the trees used for Christmas 🎄 trees, wreaths, etc; there are different spruce trees, regular green spruce is same color as the fir trees but their branches have needles all around the branch and are not soft; the tamarack spruce are the ones who loose their needles in the Fall but the wood is great to make beautiful floors, they grow is swampy land, my entire house wood floors are in tamarack or also called red spruce, needles turn red and fall and then there’s the black spruce planted to make special wood, they grow faster.
