I just love all of the Old El Paso Products! I have a vintage cookbook they produced years and years ago. I should pull it out and see what I haven't made in a while! We also love just cheese and onion enchiladas and then pour the red sauce on top and more grated cheese and onions!

☀️Amy, this quick enchilada recipe looks wonderful! Next to down home country food, Mexican is my favorite! Thanks for sharing. 🙏🏻🙏🏻Regarding your Daddy’s low potassium….either too low or too high is dangerous. My potassium tends to run low and my Dr was very concerned. He told me to eat either a banana or an orange 🍊 per day. They are high in potassium but there are other foods that are as well. I should have googled before I commented because I can’t remember the other foods. Please at least ask his Dr. When any of our electrolytes are out of norm it causes the heart to have to work harder. You probably knew all of this nut just in case I wanted to share. I like to do the oranges because a bunch of bananas 🍌 get over ripe before I can eat one per day. Momma Vikki his doctor is probably tired of hearing from me. I take him to his appointments and go in the room with him so I am one in one with his doctor. Very wonderful man. He prays with each patient before they leave. I consider him an angel.
