Seffa or Seffa Madfouna is a famous traditional Moroccan dish. Steamed Angel hair pasta (or vermicelli) sweetened with powdered sugar, cinnamon and raisins. This dish is mainly vegan but it's very common to have it with meat.
It's also tradition to drink milk infused with orange blossom extract with "Seffa".

Ingredients: (For 5 people)
500g Angel hair pasta ( Link to buy amzn.to/3fkeyLo )
1/2 cup of vegetable butter
water
1/2 cup vegetable oil
2tsp of salt
1/2 cup of raisins
1/2 cup peeled, fried then chopped Almonds
cinnamon and powder sugar for decoration
How to :
For the almonds:
Fry peeled almonds then grind them in a mixer (make sure it's a bit chunky)
For the pasta:
Mix vegetable oil and the pasta, make sure all oil is incorporated into the pasta
Fill bottom layer of a steamer pot with water, turn to high heat and let it boil.
Fill the top part of the steamer with the pasta and let it steam for 30min. (uncovered)
After the 30 min put the pasta in a big dish and rinse it with cold water, let it absorb some of the water and cools down a bit then use your hands to lift the pasta up and down (make sure the pasta is not too hot) watch video for the exact motion.
Strain the pasta from the cold water and add bit more vegetable oil then put it back in the top part of the steamer for a second steam.
After the second 30 min put the pasta in the big dish again and slowly add cold water with a utensil try and pull the pasta apart. Add salt to the pasta and mix well.
Add raisins and put the pasta back for a last steam.
After 30 min put pasta in a big dish, incorporate the butter and shape into a mountain.
Decorate with powdered sugar, powdered cinnamon and almonds.
Optional: You can enjoy this dish with a cup of cold milk infused with orange blossom extract.
