Gigi Chen Sorry to reply you late! I use Sunbeam Breadmaker with the Basic Setting to make the dough only. First Stage : 1/. put the liquid ingredients ( yudane dough湯種丶milk丶egg) into baking pan with the kneading blade attached. For better result, I used to mix well all liquid ingredients before pour in the pan. 2/. put the sifted dry ingredients ( bread flour丶salt丶sugar) in the pan. 3/. on top of the flour use the finger to make a hole and add yeast to indentation. Then press to Start. The dough is kneaded for the first time (10 mins). Then press to Stop, it is time to check the dough become smooth or not. If the dough is still sticky. You must repeat 10 mins kneading for the dough. Press Start again. Normally you will get a smooth dough after this 20mins kneading. Then press Stop again because I need to add butter at this moment, then Press to Start for another 10mins kneading the dough. You must check the dough has no butter leave on the surface. Second Stage : let the dough begins to rise (20mins) inside. Third Stage : the dough is kneaded for the second time (15mins). Fourth Stage : the dough continues to rise (20mins) inside. Fifth Stage : the dough is "punched down"(30secs). After the dough is punched down, pour out the dough on the table, add little bit flour to divide the dough into 12 portions, the rest of process you can follow MaMa KZbin. Enjoy! Sent from my iPad

When should I add nuts or raisin. After 90 mins proving? And roll it in? And how much would you suggest to add the raisin for the same amount of flour you used? Thanks
