Your misunderstanding of Cantonese is, if I may guess, due to the experiences from those migrants living in Chinatown. Yes, they practically shout and yell instead of talking mildly, because most of them didn't receive much education (IMO that is the main reason), and hiding themselves in kitchens days and nights without trying to reach out to the world. All poems and literatures in the medieval times have to be read out in Cantonese tone in order to get the rhyme right. And all of them were written in either traditional form or script form. Mandarin and simplified Chinese were invented at much later time. Their intonations and words have most of the original meaning of the language seriously severed. Mandarin is in fact a very broken language system. No good literature could be created from it at all.
