If you put them in salt water for a while then rinsing it it will remove the bitterness not all of the egg plants are bitter though. It depends on what kind of food their used in. If you barbeque it with skin then remove the skin and mash it, cook with diced onion, garlic and mashed tomatoes and add eggs at the end it will have great smell and taste.
