Oxtail Soup Recipe
Step 1: Blanch the oxtail
Step 2: Pan-fry the oxtail, until a golden-brown crust develops
Step 3: Add water until it covers the oxtail, simmer for 1.5 to 2 hours (you may need to add water in between, pay attention to the water level)
Step 4: While the oxtail is simmering, you can cut the following ingredients into small chunks:
- One leek (optional)
- Half of an onion
- Some carrots, celeries
- 2-3 tomatoes
Step 5: (If you have time, you can stir-fry the ingredients from step 4 and stir in a spoonful of tomato paste. It's fine if you skip this, it doesn't make that big of a difference)
When the oxtail is ready, throw in the ingredients. You can also throw in 2 bay leaves. Simmer for another 1 hour or so.
Step 6: In the last 15-20 minutes, throw in chopped-up potatoes (optional). Don't throw in too early or they'll dissolve in the soup.
Step 7: Do a taste test when it's ready, add some salt for flavor. Feel free to add black pepper when you serve it 😍
