I'm from Illinois and I had pea salad 45 years ago for my 1st time. My aunt made it. So it's not just a southern dish. You recipe is almost like mine. I never tried it with mustard , sweet pickles or celery. I'll have to try that. I chop my eggs up with a fork also. 😊 I'm sorry you lost a hen because someone had not been responsible for their dog. I just finished watching your pea salad video while I was enjoying my new recipe the syrup cake turned out beautiful and this pea salad brought back so many memories my mom was a wonderful cook her name was Martha Stewart and she was as good if not better as the one on TV love your videos.

2 cans drained peas, dill pickle relish, fine chopped green olives, diced pimentos, 2 boiled eggs, celery, cheese cut in small cubes, and hellmann's mayonnaise, salt and pepper. Mix and refrigerate. You can add onions if you want, but we don't like the taste of raw onions. I really don't measure anything, I just eye ball it.

I made my first English pea salad right along with you! Already had some peeled boiled eggs in the fridge from yesterday.. my son took me to dinner before I could use them ! Only thing I’m missing is bacon bits, so maybe I’ll fry up, cool , and crumble some bacon to get the full effect. And I used homemade zucchini sweet relish. It’s real good , thank you !

I have made a salad with all these ingredients but added lettuce. I used shredded cheese though. We called it 7 layer salad and just put lettuce first and layered each ingredient on that and ended with the mayonnaise on top. Did not stir , just left it layered. I had to take it to all family get togethers with my husbands family.

Sad yesterday a coyote got our Rocky the rooster he was a nasty boy but we liked him because he was so feisty you couldn’t turn your back on him or he would sneak up and attack you from behind but none the less he didn’t deserve to be coyote food. Coyotes are real bad up here in Ontario. Stay safe and healthy and I love listening to you thanks for taking the time to be with us.

Oh Amy ,I can make this for myself. I don’t think there’s carb’s in it. Is there,,, Hey, it’s not been long since we helped you plant this garden. I think I will use green frozen peas. Just because I have some in my freezer. You are so blessed to be able to live on that farm. I love the old chimney,it does something to the soul to drive alone the road and see one like that. John and I both are keeping you in our prayers for w quick recovery from your cold. Frozen peas work really well in this salad. We were so happy John was able to save the chimney. Yes we were. He bulldozed the house down so we weren’t sure it would stay up or topple over. So glad you have the stuff to make that English pea salad for yourself. We have always made English Pea Salad the way you mentioned last. Plain Jane...Very small english peas (I prefer Dubon brand), boiled eggs, relish, cooked elbow macaroni and mayonnaise. It is so Good but, so is the way you made it. 😋 So Yummy.

Can’t wait to actually get a home with a kitchen to cook again, being homeless in a garage I can’t cook much with just an electric skillet and no refrigerator....I’m gonna make this. Do you plan to eat or cook the sunflower? I recently learned that the sunflower is edible. Total plant is edible. It is called the "choke" plant and supposed to taste like an artichoke. The roots can be cooked like a potato. Enjoy your videos and stories. Susan
