Exactly as my Yorkshire grandmother made them. She left all of her tart recipes and I have made them often, but this is not one I have attempted. Watching your vlog has inspired me to dust off her recipes and make a few tarts. Thank you.

These look delicious! I’m going to give them a try. I can remember milk in glass bottles, delivered to our house when I was a child in Ontario, Canada. In the winter the cream would start to freeze slightly and would sit about an inch above the top of the bottle with the little, round cap sitting on the top. There was a special spoon that would fit down the neck of the bottle, and the bowl of the spoon would block the milk from escaping when the cream was poured off. A trip down memory lane!

The curds originally used in Yorkshire curd tarts were not "made from cheese making" but from beastings, which was the rich milk produced at calving time.

If you have access to a local dairy herd try to get hold of some of the first milk drawn from a mother cow or collestrum milk immediately after she gives birth ( known in some parts of Yorkshire as beastings, which is a naturally boosted milk that the cows only produce after giving birth) to use just as your recipe but in place of the whole milk.

I can not find the standalone pastry recipes on the site. I've seen you make the various pastry crust doughs where you used them but I can't find them without perusing all of the recipes. The curd tart filing looks to be fabulous tasty.

Hello, nice to hear from you. In my UK bakery we made milk loaves for many years but they went out of favour in the mid 1970's and we discontinued them.I do have my old recipe somewhere amongst my old papers and the iconic round tins are long gone. I have added about three tablespoons and the result seems all right! I have made it without fruits as I am trying to copy the recipe of Maids of Honours tarts in Kew, London. Your website is great! I don't know where you're looking but I'ne just copped this from my website Ingredients 130 g Short Crust Pastry 1 Pinch Nutmeg. For the filling 200 g Cheese Cottage, Full Fat well drained 40 g Butter Salted , Melted 25 g Sugar 50 g Currants I use golden sultanas as currants are almost impossible to get in Spain 20 g Cream 1 medium Egg Zest of half a lemon Half of the nutmeg. Plus I'm not sure what 'Maids of Honour tarts have to do with 'Yorkshire Curd Tarts' explained please.

@@MrPaulsPantry oh 20gr of cream...I have used 3 tablespoons. Those maids of honours made in London look more similar to the Yorkshire tarts. That's my impression... I will try also the Maids of honours recipe that you have written! Hope you're better!

Careful how you say curd tarts! Reminds me when the Half Moon pub at Skidby, just outside of Hull, specialised in Yorkshire Pudding dishes, all delicious. The locals pronounced ‘Toad in the Hole’ like ‘Turd in the hole’. So as a man, who yet has not grown up, I asked the waitress with my Dorset accent impression - for a ‘Turd in the hole’. She wasn’t amused. Hope I haven’t offended anyYorkshire or other people!
