When I miss Japan, it is often a food memory that triggers the feeling. I love and miss Japanese cuisine. Sharing a meal makes people like each other or as the feel closer with strong bond. Eating the same food leads to trust and cooperation because they feel closer with the feeling of intimacy among those eating together, share the experience with eating and drinking.
I love seeing you eat deliciously! I think Japanese nabe dishes are very healthy with well-balanced mixes of meats or fishes, vegetables, tofus and mushrooms, and then the vegetables soaking up the moisture. In the cold winter, it's great to have nabe dishes and hot sake!

I would recomemnd you to try Japanese Local Area of Hot Springs, such as KUSATSU, Nozawa, Arima, etc, with small Traditional Hotel. And inform your favorite nabe cuisine to the Hotel. As nabe is a popular one in Japan, Hotel cook shall prepare them perfectly and you could enjoy it after Hot Spring Bath

NABE is real japanese healthy food because it use no oll and buttter ..
I watched thinking, "Skye-san must drink a lot of sake.” My favorite nabe dishes are "Damako nabe" (damako = Kiritanpo dumplings) from Akita prefecture, Tetchiri(Fugu chiri) from Yamaguchi prefecture, and Ankou nabe from Ibaraki prefecture. On the other hand, Kyoto's "Yudofu," which is just soup stock and tasty tofu, is hard to ignore.

I would highly recommend you to try 'Buri-Daikon'(ぶり大根)Seriola quinqueradiata(Yellow tail) +radishes One of the famous winter cuisine and combination with Sake is very nice
